Chicken, Asparagus, and Broccoli Stir-Fry Recipe

Number Of Ingredients 9

2 tablespoons Asian sesame oil, divided
2 garlic cloves, chopped
2 cups 1 1/2-inch pieces asparagus
2 cups small broccoli florets
6 tablespoons low-salt chicken broth, divided
1 1/4 pounds tablespoons skinless boneless chicken breast halves, thinly sliced crosswise
4 large green onions, chopped
3 tablespoons tablespoons hoisin sauce*
1 tablespoon oyster sauce

Steps:

  • Heat 1 tablespoon oil in large nonstick skillet over medium-high heat. Add garlic and stir 30 seconds. Add asparagus, broccoli, and 4 tablespoons broth. Cover and cook until vegetables are crisp-tender, about 3 minutes. Transfer vegetables to bowl.
  • Add remaining 1 tablespoon oil to skillet. Sprinkle chicken with salt and pepper; add chicken and green onions to skillet. Stir-fry until chicken is just cooked through, about 3 minutes. Mix in hoisin sauce, oyster sauce, vegetables, and remaining 2 tablespoons broth. Toss until heated through and sauce coats evenly, about 1 minute. Season to taste with salt and pepper. Transfer to bowl.

1 bunch asparagus, ends trimmed
1 (8 oz) package broccolini, sliced in half lengthwise
1 tablespoon olive oil, plus more for drizzling
4 cloves garlic, minced
1 lemon, zested, 2-3 tablespoons juiced
1/2 cup blueberries
1/3 cup Progresso™ panko bread crumbs, lightly toasted
Parmesan cheese shavings, for garnish
Salt and pepper

Steps:

  • Begin by gathering your ingredients.
  • Bring a large pot of salted water to a boil. Add the asparagus and broccolini to the pot; boil for 3 minutes.
  • In the meantime, heat a tablespoon of olive oil in a large sauté pan over medium-high. Using tongs, transfer the asparagus and broccolini to the pan; sauté for two minutes. Add the garlic and a tablespoon of lemon juice and sauté 30 more seconds. Season with salt.
  • Transfer the veggies to a large serving platter. Cool slightly, then top with blueberries, toasted panko, lemon zest, parmesan shavings, a drizzle of olive oil, and a grind of black pepper. Give one more lemon spritz to the whole thing and serve immediately.

Add the garlic and 2 teaspoons of the oil and season lightly with the salt and pepper. Spread the Brussels sprouts in a single layer in a small baking span and roast for 10 minutes. Meanwhile, trim the asparagus. Remove the tough lower stems from the broccoli, peel off the tougher stem skin with a paring knife, and slice the stalks lengthwise into long strips from stem through florets. Toss the asparagus and broccoli gently in a bowl with the remaining 1 tablespoon of the oil and light salt and pepper until coated.
