Best Smoked Trout Recipe | Oklahoma Joe’s New Zealand image

This simple Smoked Trout recipe calls for curing the freshwater fish first to enhance its natural flavour. Then you’ll smoke it with no additional seasonings that could overpower the mild fish. Serve it on grilled bread with sour cream, fresh dill, capers and minced onions. Closely related to salmon, trout has a delicate nutty flavour and can be white, pink or orange. Look for fish with moist flesh, a fresh, mild aroma, shiny skin and clear eyes.

Number Of Ingredients 15

Trout
2 trout fillets, 700 g each
grilled bread
handful apple, cherry and/or alder wood chunks
Cure Mixture
1½ cups brown sugar
¾ cup salt
2 tablespoons chopped fresh dill
1 tablespoon ground black pepper
1 tablespoon onion powder
Toppings
sour cream
fresh dill
pickled capers
minced onions

Steps:

  • 1. Place trout fillets, skin side down, in a large baking dish. 2. Combine brown sugar, salt, dill, pepper and onion powder in a medium-size bowl. Mix with your fingers to break up any lumps. 3. Spread the cure mixture over the trout fillets to completely cover them. Place in the refrigerator for 4 hours. 4. Remove fillets from refrigerator and rinse under cold water. Pat dry with paper towels. Let the fillets dry at room temperature for 30 minutes. 5. Preheat smoker to 135°C. Toss 1-2 wood chunks onto hot coals for smoking. 6. Place trout fillets in the smoker. Cook for 45 minutes to 1 hour. HOT TIP – To check for doneness, gently push down with your finger near the edge of the fillet. If the flesh falls apart easily, it’s done. 7. Remove trout from the smoker. Top with dill, capers and minced onion. Serve on grilled bread with sour cream on the side.

Cold smoked trout combines brilliantly with bacon and earthy lentils in this easy meal

225g green lentil
1small dried red chilli
1 bay leaf , torn
1medium carrot , cut into tiny dice
100g smoked streaky bacon lardons
1 garlic clove , crushed
1medium red onion , finely chopped
4 smoked trout fillets (50-85g/2-3oz each), skin and bones removed
3-4 tbsp roughly chopped flatleaf parsley
6 tbsp good olive oil
2 tbsp balsamic vinegar

Steps:

  • Put the lentils in a deep saucepan and cover with cold water. Bring to the boil, skim off any scum that rises and then add the chilli and bay leaf. Simmer until the lentils are nearly soft (about 15 minutes), then add the carrot and cook for a further 5 minutes. Drain, discard the chilli and bay leaf, then tip the lentils into a bowl.
  • Fry the lardons on their own in a frying pan until the fat runs and they begin to colour. Add the garlic and onion and cook for 2-3 minutes until the onion begins to soften.
  • Tip this mixture into the lentils and toss well, then mix the dressing ingredients together and gently fold through the lentils. Taste and add salt and pepper. Rest the trout fillets on the lentils, scatter with the parsley and serve.
