Spaghetti And Turkey Meatball Bites With Shady Brook Farms® Fully Cooked Italian Style Turkey Meatballs, Spaghetti, Spaghetti Sauce, Grated Parmesan Cheese, Shredded Mozzarella Cheese, Nonstick Cooking Spray

Provided by Shady Brook Farms

Total Time 45 minutes

Yield 12

Number Of Ingredients 6

1 package Shady Brook Farms® Fully Cooked Italian Style Turkey Meatballs
6 ounces spaghetti cooked
2 cups spaghetti sauce divided
1/4 cup grated Parmesan cheese
1/4 cup shredded mozzarella cheese plus more for topping
nonstick cooking spray

Steps:

  • Cook pasta according to package.
  • While pasta is cooking, sear your meatballs in a cooking pan over medium-high heat. Add one cup of spaghetti sauce and continue to simmer until meatballs are cooked thorough, roughly 5-7 minutes. Meatballs are fully cooked when meat reaches an internal temperature of 165°F using a meat thermometer.
  • Place your spaghetti in a large bowl, add spaghetti sauce, grated Parmesan cheese, and mozzarella cheese. Mix until combined.
  • Spray a 12 cup muffin tin with nonstick cooking spray. Divide spaghetti into the 12 baking cups. Create a small "hole" for your meatballs. If your meatballs are large, cut in half and add to the top of your spaghetti bites with some extra sauce. Sprinkle with mozzarella cheese.
  • Bake at 375°F for about 20 minutes or until cheese is bubbly and melted.

  • Heat butter in a medium saucepan over medium-high heat. Add the garlic and onion and sweat until the onions are translucent and soft. Let the mixture cool. In a large bowl, mix the ground turkey and turkey sausage. Add the garlic and onion mixture and stir to combine. Add the dried basil, dried oregano, fresh oregano, chili flakes, breadcrumbs, parmesan cheese, caper juice, tomato paste, kosher salt, and a splash of cold water, and stir to incorporate evenly. Roll the meatballs into one-inch balls and place them on a sheet tray. Place into a 350-degree oven for about 5 minutes, so they don’t dry out. In the meantime, make the sauce. Heat a large cast-iron skillet over medium-high heat with olive oil. Add the garlic, salt, dried basil, dried oregano, fresh oregano, and mix to toast in the oil. Pour in the white wine and reduce cooking out the alcohol. Then add in the fresh pureed tomatoes (they should be smooth). The sauce looks a little thin and pink at first, but it will cook down to a thick red sauce. Add the tomato paste, green onions, and fresh basil and incorporate into the sauce. Allow the sauce to reduce down. Add the partially cooked meatballs into the sauce and continue to cook until the meatballs are cooked through. Bring a large pot of salted water to a boil and add the spaghetti and a drizzle of olive oil. Cook until desired doneness and drain. Toss in olive oil before mixing it into the sauce (optional). Sprinkle the spaghetti with chopped parsley and serve with the sauce and meatballs. Garnish with more parsley, basil, and parmesan cheese.
