1 egg yolk
1 teaspoon Dijon mustard
1 cup extra-virgin olive oil
½ clove garlic, minced
lemon juice to taste
salt and pepper to taste

Steps:

  • In a bowl, whisk together the Dijon mustard and egg yolk. Slowly pour in olive oil while whisking rapidly. After all the olive oil is in the mixture, blend in the garlic and lemon juice. Season with salt and pepper.

Steps:

  • Mix mayonnaise, garlic, lemon juice, salt, and pepper in a bowl. Cover and refrigerate for at least 30 minutes before serving.
