When company's coming, you can't go wrong with classic cocktail meatballs. One batch will make 4 dozen meatballs, but you can easily double the recipe if you're expecting a large crowd because these delicious meatballs won't last long.

1 1/2 pounds pounds ground chuck
1/4 cup seasoned breadcrumbs
2 teaspoons prepared horseradish
2 garlic cloves, crushed
3/4 cup tomato juice
2 teaspoons kosher salt
1/4 teaspoon freshly ground black pepper
2 medium-size yellow onions, chopped (about 1 1/2 cups), divided
Vegetable cooking spray
2 tablespoons butter
2 tablespoons all-purpose flour
1 1/2 cups beef broth
1/2 cup dry red wine
2 tablespoons light brown sugar
2 tablespoons ketchup
1 tablespoon fresh lemon juice
gingersnaps, crumbled (about 3 Tbsp.)

Steps:

  • Preheat oven to 450°. Gently stir together ground chuck, next 6 ingredients, and 3/4 cup chopped onions. Shape into 1-inch balls; place in a lightly greased (with cooking spray) 9- x 13-inch baking dish. Bake 20 minutes. Remove from oven, and drain off excess fat.
  • Heat butter in a large skillet over medium heat; add remaining onions, and sauté 4 to 6 minutes or until tender. Whisk in flour; cook, whisking constantly, 1 minute. Gradually whisk in beef broth, and cook, whisking constantly, until smooth. Stir in wine and next 4 ingredients. Reduce heat to low, and cook, stirring often, 15 minutes. Add meatballs, and simmer, stirring occasionally, 5 minutes.

1 large egg, lightly beaten
1/2 cup finely chopped yellow onion
1/4 cup fine dry bread crumbs
2 tablespoons grated Parmesan
2 tablespoons milk
2 teaspoons Creole mustard
1 1/2 teaspoons minced garlic
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon dried parsley
1/2 teaspoon Essence, recipe follows
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/2 teaspoon Worcestershire sauce
1/4 teaspoon hot red pepper sauce
2 teaspoons vegetable oil
2 teaspoons unsalted butter
1 cup ketchup
1/2 cup grated yellow onions
1 teaspoon minced garlic
1/4 cup packed light brown sugar
1/4 cup red wine vinegar
1 tablespoon Worcestershire sauce
1/4 teaspoon ground black pepper
1 teaspoon salt
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large bowl, combine all the ingredients for the meatballs, except the oil and butter. Mix well with your hands. Form into individual meatballs, about 1-inch in diameter. In a large skillet, heat the oil and the butter over medium-high heat. Add the meatballs and cook, turning until brown on all sides. Transfer to a 2 1/2 quart baking dish.
  • Make the sauce by combining all the ingredients in a medium bowl, whisking to dissolve the sugar and combine. Adjust the seasoning, to taste. Pour the sauce over the meatballs and bake until the meat is cooked through and the sauce is bubbly, 20 minutes. Remove from the oven and serve immediately.
  • Combine all ingredients thoroughly and store in an airtight jar or container.

Pick, finely chop and add the sage and rosemary, then mix and scrunch together. Shape into little balls, around the size of a gobstopper.
    5. Heat 3 tablespoons of oil in a large frying pan over a medium-high heat, add the meatballs cook until browned over – be careful not to break them up.
    6. Once browned, add the meatballs to the tomato sauce, stir carefully to cover, and braise gently for 45 minutes, or until cooked through.
    7. Serve each portion scattered with a few raw peas, shavings of pecorino and picked marjoram (if using).
