- Preheat oven to 450°. In a large bowl, mix hash browns, Parmesan cheese, egg whites and seasonings until blended. Divide potato mixture among 18 well-greased muffin cups; press on the bottoms and up the sides to form cups., Bake until edges are dark golden brown, 22-25 minutes. Carefully run a knife around sides of each cup. Cool 5 minutes before removing from pans to a serving platter. Meanwhile, heat pulled pork according to package directions., Sprinkle cheese into cups. Top with pork, sour cream and bacon; sprinkle with chives. Serve warm.

Rub the mixture all over the pork, cover with plastic wrap and pop it in the fridge for a couple hours or overnight. 2) Preheat your oven to 300 degrees, place the onions in the bottom of a roasting dish and sit the roast on top of the onions. 3) Cover with aluminum foil and roast for 3 hours, uncover and continue to roast for an additional 3 hours or so or until the meat falls apart. Allow the meat to cool , take 2 forks or use your fingers to pull the meat apart. 4) Turn the heat up to 350 pour the sauce over the shredded pork in the roasting pan and pop it back in the oven for about 10 minutes to warm everything through. 5) Serve with good homemade coleslaw on soft buns or toasted kaiser rolls!
