ICED PU-ERH TEA | CHINA SICHUAN FOOD

Iced pu-erh tea for hot summer days.

Number Of Ingredients 4

2 L clean water
30 g brown sugar
1 tablespoon rip pu-erh tea
ice cubes for serving

Steps:

  • Boil water in a pot and then add brown sugar. Stir until dissolve.
  • If you prefer, you can wash your pu-erh tea leaves quickly with hot water and transfer the leaves to the pot. Continue cook for 1 minute, turn off the fire and rest for 4-6 minutes with lid covered.
  • Strain the liquid to remove the tealeaves, cool down in room temperature and then refrigerate.
  • Add ice cubes before serving if you prefer.

6 regular-size Pu-erh tea bags
2?¼ cups boiling water
2 cups (16 ounces) cognac (such as Remy Martin XO Cognac)
Spherical ice cubes

Steps:

  • Place tea bags in a teapot or a medium-size heatproof bowl. Pour boiling water over tea bags, and press bags against side of teapot using a spoon until tea water is coffee colored. Let steep, uncovered, 10 minutes. Remove and discard tea bags. Stir cognac into brewed tea. Refrigerate until chilled and flavors meld, about 3 hours. Serve over spherical ice cubes in teacups. Tea may be stored, covered, in refrigerator up to 3 days.
