This prosciutto sandwich is quick and easy to put together. Buttery toasted bread is layered with salty prosciutto, melty cheese and fresh vegetables for a simple, yet sophisticated sandwich.

8 oz salted butter
8 slices of multigrain bread
8 oz San Daniele prosciutto, sliced thin
8 oz Emmentaler cheese
handful of kale or spinach
8 oz roasted red peppers

Steps:

  • In a large frying pan, melt butter until toasted and browned.
  • Brush melted butter onto the bread.
  • Build the sandwich by layering the prosciutto, cheese, kale and peppers. Return the sandwich back to the pan and toast until golden brown on both sides.
  • Serve warm. Enjoy!

8 tablespoons (1 stick) unsalted butter, room temperature
2 baguettes, halved horizontally
4 tablespoons Scallion Oil for Prosciutto Sandwich
6 ounces very thinly sliced prosciutto di Parma

Steps:

  • Smear 4 tablespoons butter over the bottom half of each baguette. Drizzle with oil. Divide prosciutto evenly between the baguettes. Place the top halves over the prosciutto. Cut each baguette crosswise into 4 pieces. Serve immediately.

This recip was created for the RSC game 2018. You may use any kind of focaccia bread you like. Either a big one or four focaccia rolls. I used two small gluten free focaccia breads. You probably won't need the whole jar of pesto, but feel free to use as much of it as you like. Also you may use more mozzarella if you want it super cheesy. I had one large ball which I sliced very thinly. For the tomatoes, any kind is fine. Date or cherry tomatoes are great because they don't contain so much liquid so that the sandwich will not get too soggy. I used large tomatoes, though, and it was fine.
