Ingredients

2 cups butter, softened
1 cup sugar
4 cups all-purpose flour
2 teaspoons vanilla extract
1 cup crushed potato chips
1 cup chopped pecans

Steps:

In a large bowl, cream butter and sugar until light and fluffy. Beat in vanilla. Gradually add flour; beat just until combined. Stir in potato chips and nuts. Cover and refrigerate for 1 hour., Drop dough by tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 350° for 12-15 minutes or until golden brown. Remove to wire racks to cool.

Ingredients

3/4 cup unsalted butter, room temp
1 teaspoon vanilla
1/4 teaspoon kosher salt
1/2 cup sugar
1 1/2 cups all-purpose flour
1/2 cup pecans, chopped
3/4 cup potato chips, crushed (2 c when whole)
1/2 cup sugar

Steps:

Heat oven to 350 degrees.
Line 2 baking sheets with parchment paper.
Using an electric mixer beat butter, vanilla, salt and sugar until light and fluffy, about 3 minutes.
On low, beat in flour until just incorportated.
Stir in pecans and crushed potato chips.
In small bowl, place sugar. Roll level teaspoons of dough into balls and roll them around in sugar to coat.
Place on prepared baking sheets, spacing them 2" apart. With flat bottomed cup or glass, press each ball in to 1/4" thick round.
Bake until lightly brown, 16-18 minutes.
Let cool for 5 minutes before transferring to wire racks to cool completely.
