My daughter's boyfriend's mom gave her a cookbook that was created by the Houston Ballet for their Nutcracker Christmas Market in 1984. The recipes in the book were submitted by directors, choreographers, and dancers in the Houston Ballet that year. This recipe was submitted by Li Cunxin, Principal Dancer.

1 lb lean pork loin
15 garlic cloves
4 stalks celery
1 green bell pepper
1 teaspoon brown rice vinegar
3 tablespoons peanut oil
3 tablespoons soy sauce
1 teaspoon sesame oil
1 pinch sea salt

Steps:

  • Cut pork into 1" slices. Peel and mince the garlic. Chop the celery and green pepper into 1" pieces.
  • Heat a wok (dry), then add 2 tablespoons of peanut oil. When oil is heated add half of the chopped garlic. Stir until garlic turns light brown in color.
  • Add the pork and stir-fry until it begins to turn white. Add the soy sauce and rice vinegar and stir for 30 seconds. Remove all ingredients from wok and set aside.
  • Add the remaining 1 tablespoon of peanut oil to the heated wok. Add the remaining chopped garlic and stir until it begins to brown.
  • Add the celery pieces and stir for 30 seconds. Add the green pepper and stir for 15 seconds.
  • Add a pinch of sea salt and stir quickly. Add the pork mixture that was set aside and stir for 2 minutes.
  • Sprinkle sesame oil over the dish and turn off heat. Cover and let sit for 1 minute.
  • Serve immediately with rice or noodles.

4 teaspoons cornstarch, divided
5?½ tablespoons soy sauce, divided
1 pound lean, boneless pork chops, cut into thin strips
1 cup uncooked long-grain rice
¼ cup water
4 teaspoons hoisin sauce
1 teaspoon sesame oil
1 tablespoon peanut oil
½ (8-ounce) package sliced fresh mushrooms
4 green onions, sliced
1 (8-ounce) can sliced water chestnuts, drained
3 garlic cloves, minced
2 teaspoons minced fresh ginger
½ teaspoon dried crushed red pepper
2 tablespoons fresh orange juice
Garnishes: chopped green onions, orange slices

Steps:

  • Stir together 2 teaspoons cornstarch and 1 1/2 tablespoons soy sauce in a medium bowl until smooth. Add pork, tossing to coat. Let stand 15 minutes.
  • Prepare rice according to package directions. Keep warm.
  • Stir together remaining 2 teaspoons cornstarch, remaining 4 tablespoons soy sauce, 1/4 cup water, and 4 teaspoons hoisin sauce.
  • Heat oils in a large skillet or wok over medium-high heat 2 minutes. Add pork mixture, and stir-fry 3 to 4 minutes or until pork is browned. Add mushrooms and next 5 ingredients; stir-fry 2 minutes. Stir in hoisin sauce mixture, and stir-fry 1 minute or until thickened. Stir in orange juice. Serve over warm rice. Garnish, if desired.

  • In a small bowl, whisk the cornstarch with 1 tablespoon of the rice wine. Place a large wok or large skillet over high heat. Add the oil to the wok and swirl until it starts to smoke. Add the ginger, garlic, sugar, dried chiles and scallions and stir-fry for 30 seconds. Add the pork and cook, stirring, until charred in spots, then add the asparagus and stir-fry for 3 minutes.   • Heat oil and butter in a heavy skillet over high heat. Salt and pepper both sides of the pork chops and sear them on both sides until they're nice and golden, about 2 minutes per side. (No need to completely cook the chops at this point.) Remove the chops from the skillet and set aside. Reduce the heat to medium-high, then throw in the whole garlic cloves. Stir them around and cook them for several minutes, or until they get nice and golden brown. Pour in the red wine, then add the bay leaf. Stir around and let it reduce, raising the heat if necessary. Cook the sauce for several minutes, or until it's nice and reduced and thick. Stir in the beef broth (you can add more if it needs the liquid) and add the chops back into the cooking liquid, arranging them so that they're swimming in the sauce. Allow the chops to cook in the liquid for a few minutes, then pour in the balsamic. Shake the pan to get it to distribute, then cook for a couple more minutes, or until the pork chops are done. Remove the chops from the pan once more, then let the sauce reduce a little more if needed until it's very thick and rich and the garlic is soft. Swirl in 1 tablespoon of butter and sprinkle in a little salt and pepper. Arrange pork chops on a platter, then pour the whole skillet of sauce (including garlic) over the top.Serve with a green salad. *You may substitute white wine for a slightly lighter sauce.
