A casserole with all the flavors of traditional tamales I use the Knorr brand chipotle cubes, that can be found in most major grocers. I also cook a whole pork shoulder and then shred the leftovers for various other meals.

- Preheat oven to 350 degrees.
- For Filling:.
- Combine all filling ingredients in a large skillet.
- Bring to boil.
- Reduce to simmer. Simmer for 20 minutes.
- For Topping:.
- Combine all topping ingredients, and mix well. Mixture will be slightly lumpy.
- Assembly:.
- Pour filling into a large casserole dish. Smooth with the back of a spoon. Cover with topping mixture, again smoothing with spoon.
- Bake uncovered for 45 minutes.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Season pork roast with garlic salt to taste and place in a 10x15 inch roasting pan. Add water as needed to cover roast halfway.
- Bake at 350 degrees F (175 degrees C) for 2 hours.
- When roast is cool enough to handle, cube the meat and reserve the water from the roasting pan. In a large skillet over medium low heat, combine the meat with 2 cups reserved broth and allow to simmer.
- In a separate skillet over medium heat, combine the cornmeal, milk, corn, tomatoes and eggs. Stir well and add the chili powder, cayenne pepper and salt. Let cook for 20 minutes, stirring often. Add broth as needed if mixture gets too thick. Combine this mixture with the pork in a 9x13 inch baking dish, mixing together well.
- Bake at 350 degrees F (175 degrees C) for 30 to 45 minutes.

- Preheat oven to 325 degrees F. Lightly grease a 2-quart baking dish. Combine tomatoes, onion, pepper, garlic, chili powder, oregano, cumin, and 1/4 teaspoon each salt and pepper in a bowl; transfer to prepared sih. Rub pork with sugar, 1 teaspoon salt and 1/2 teaspoon pepper; place on top of tomato mixture. Bake, uncovered, until pork is fork tender, 3 1/2 to 4 hours. Shred pork into bite-size pieces with two forks; stir back into dish with sauce. Make Cheddar-Cilantro Cornbread Crust: Combine cornmeal, flour, baking powder, and salt in a bowl. Stir in cheese, cilantro, buttermilk, egg, and butter in a bowl; add to cornmeal mixture and stir just until dry ingredients are moistened. Increase oven temperature to 425 degrees F. Spread Cheddar-Cilantro Cornbread Crust over pork mixture, leaving a 1-inch border all around. Bake until golden brown and crust is set. 18 to 20 minutes. Let stand 10 minutes before serving.

- NEW NOTE On the Masa Harina: I had to buy a new brand of Masa Harina because my store stopped carrying the old one. This one was labeled INSTANT Masa (corn) flour for tortillas, tamales, etc. It uses COLD water, not hot. I used the boiling like I always do with regular cornmeal, and got a very thick lump. I had to beat and beat to get it smooth enough to spread. So watch what type of Masa flour you get. Boiling water works fine with cornmeal, but use cold water on the instant masa harina.
