PORK TAMALE CASSEROLE RECIPE - FOOD.COM

A casserole with all the flavors of traditional tamales I use the Knorr brand chipotle cubes, that can be found in most major grocers. I also cook a whole pork shoulder and then shred the leftovers for various other meals.

1 1/2 lbs cooked pork shoulder, chopped
1 (8 ounce) can tomato sauce
1 medium onion, chopped
1 garlic clove, minced
1 tablespoon chili powder
1 (15 ounce) can diced tomatoes
2 cups water
1 dried chipotle powder, cube
1/2 cup butter, melted
8 ounces sour cream
1 (15 ounce) can creamed corn
1 (8 1/2 ounce) package Jiffy cornbread mix
2 large eggs, beaten
1 (15 ounce) can corn

Steps:

  • Preheat oven to 350 degrees.
  • For Filling:.
  • Combine all filling ingredients in a large skillet.
  • Bring to boil.
  • Reduce to simmer. Simmer for 20 minutes.
  • For Topping:.
  • Combine all topping ingredients, and mix well. Mixture will be slightly lumpy.
  • Assembly:.
  • Pour filling into a large casserole dish. Smooth with the back of a spoon. Cover with topping mixture, again smoothing with spoon.
  • Bake uncovered for 45 minutes.

3 pounds boneless pork loin roast
garlic powder to taste
1 cup cornmeal
½ cup milk
1 (15 ounce) can whole kernel corn
1 (14.5 ounce) can peeled and diced tomatoes
2 eggs, beaten
1?½ teaspoons chili powder
1?½ teaspoons cayenne pepper
1 teaspoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Season pork roast with garlic salt to taste and place in a 10x15 inch roasting pan. Add water as needed to cover roast halfway.
  • Bake at 350 degrees F (175 degrees C) for 2 hours.
  • When roast is cool enough to handle, cube the meat and reserve the water from the roasting pan. In a large skillet over medium low heat, combine the meat with 2 cups reserved broth and allow to simmer.
  • In a separate skillet over medium heat, combine the cornmeal, milk, corn, tomatoes and eggs. Stir well and add the chili powder, cayenne pepper and salt. Let cook for 20 minutes, stirring often. Add broth as needed if mixture gets too thick. Combine this mixture with the pork in a 9x13 inch baking dish, mixing together well.
  • Bake at 350 degrees F (175 degrees C) for 30 to 45 minutes.

This tamale recipe is about as traditional as you can get, although I use a roast instead of the whole pig head that many Mexican women use. I have also used beef, but they just do not taste quite the same. These take about all day to make and are a lot of work, but they are so worth the time and the effort. Not for the faint-hearted cook for sure. They are a huge hit here in the West. For added flavor, top with either some of the red sauce used to prepare this recipe, or with my favorite, green chili sauce with pork, recipe #20574. Serve with sides of Spanish rice, refried beans topped with cheese and frosty margaritas for a delicious authentic Mexican meal.   • NEW NOTE On the Masa Harina: I had to buy a new brand of Masa Harina because my store stopped carrying the old one. This one was labeled INSTANT Masa (corn) flour for tortillas, tamales, etc. It uses COLD water, not hot. I used the boiling like I always do with regular cornmeal, and got a very thick lump. I had to beat and beat to get it smooth enough to spread. So watch what type of Masa flour you get. Boiling water works fine with cornmeal, but use cold water on the instant masa harina.
