3 tsp Chipotle chili powder
1.5 tsp Ground cumin
1.5 tsp Ground coriander
0.75 tsp Table salt
1.5 pound(s) Uncooked lean trimmed pork loin trimmed and cut into 1 1/2-inch chunks
2 tsp Canola oil
1 large Uncooked onion(s) chopped
1 item(s), medium Uncooked bell pepper(s) large, orange or yellow, cut into 1-inch pieces
3 medium clove(s) Garlic clove(s) minced
1 tsp Dried oregano
14.5 oz Canned chicken broth
14.5 oz Canned diced tomatoes
2 Tbsp Whole-grain yellow cornmeal
15 oz Canned hominy white or golden, rinsed and drained
0.25 cup(s) Cilantro chopped
2 item(s) Fresh lime(s) cutinto wedges

Steps:

  • 1 Stir together 1 teaspoon chile powder, 1/2 teaspoon cumin, 1/2 teaspoon coriander, and 1/2 teaspoon salt in cup; rub pork all over with spice mixture.
  • 2 Spray large skillet with nonstick spray and set over medium- high heat. Add half of pork and cook, turning occasionally, until browned, about 5 minutes. Transfer to 5- or 6-quart slow cooker. Repeat with remaining pork, spraying skillet again with nonstick spray.
  • 3 Reduce heat to medium and add oil to same skillet. Add onion and bell pepper; cover and cook, stirring occasionally, until vegetables are crisp-tender, about 5 minutes. Stir in garlic, oregano, remaining 2 teaspoons chile powder, remaining 1 teaspoon cumin, and remaining 1 teaspoon coriander. Cook, stirring, just until fragrant, about 30 seconds. Add broth and bring to boil, stirring to scrape up browned bits from bottom of pan.
  • 4 Add vegetable mixture to slow cooker; stir in tomatoes. Cover and cook until pork is fork-tender, 4–5 hours on High or 8–10 hours on Low. Gradually stir in cornmeal, then hominy, during last 15 minutes of cooking time. Stir in remaining 1/4 teaspoon salt.
  • 5 Ladle evenly into 8 bowls; sprinkle with cilantro and serve with lime wedges.

1 2-pound boneless pork shoulder
1 onion, chopped
4 cups low-sodium chicken broth
1 15.5-ounce can diced tomatoes
1 15-ounce can hominy, drained
1 15-ounce can pinto beans, rinsed
2 tablespoons lime juice, plus wedges for serving
Chopped avocado, cilantro, and crumbled queso fresco or Feta, for serving

Steps:

  • Combine the cumin, paprika, oregano, 1½ teaspoons salt, and 1 teaspoon pepper in a small bowl. Coat the pork with this mixture, then transfer to a 4- to 6-quart slow cooker. Add the onion, broth, tomatoes, hominy, and beans and stir to combine. Cover and cook until the pork is tender, on low for 6 to 7 hours or on high for 4 to 5 hours.
  • Shred the pork using 2 forks and mix it into the cooking liquid. Stir in the lime juice and ¼ teaspoon each salt and pepper. Serve the soup topped with the avocado, cilantro, cheese, and lime wedges.
