The following recipe is adapted from the Don't go bacon my heart website (www.dontgobaconmyheart.co.uk) and features a simple appetizer or finger food version of fried chicken. Take the marinating time into account when planning.

- Slice the meat into small, even chunks and mix them in a bowl with buttermilk, 1 teaspoon of salt, and a good amount of black pepper. Cover the chicken with some cling film and let soak in the refrigerator for at least 1 hour, preferably overnight.
- Mix flour, baking powder, 1 teaspoon of salt, smoked paprika, cayenne pepper, onion powder, garlic powder, oregano, and some black pepper in a bowl, then coat the chicken pieces in the flour mixture, one at a time, covering the chicken entirely and thoroughly.
- Heat 480 to 720 ml (2 to 3 cups) of oil, taking into account the pan depth, and check the temperature of the oil by dropping a small amount of coating mixture into the pan – if the oil izzles, it is ready for frying.
- Fry the chicken in 2 or 3 batches for 3-5 minutes, until golden brown. Place on some paper towel to drain the excess fat away. To test if the chicken is cooked, slice one piece down the middle – it should be white and piping hot. Serve with a favorite dip.

Steps:
- Mix flour, garlic powder, salt, and black pepper together in a bowl. Beat eggs and lemon juice together in a separate bowl.
- Heat 1 1/2 to 2 inches of oil in a large pot over medium heat.
- Dip the chicken pieces into the flour mixture, then the egg mixture, and again into the flour mixture.
- Test the oil to make sure it is hot enough: a small amount of flour dropped in should sizzle. Place 10 pieces of chicken into the hot oil; cook until golden brown, about 8 minutes. Remove from the oil and drain on a paper towel lined plate and season with salt. Repeat with remaining chicken.
