Sauerkraut With Polish Sausage Recipe - Food.com image

This is our favorite sausage and sauerkraut dish ever. It's very filling and smells wonderful while it's cooking. From the Orbit Restaurant (Polish) in Chicago.

Number Of Ingredients 9

6 slices smoked bacon, 2-inch wide strips
1 large onion, sliced
1 carrot, chopped
2 lbs sauerkraut, rinsed and drained
2 cups dry white wine
1 1/2 cups chicken stock
1 tablespoon caraway seed
4 juniper berries or 1 tablespoon gin
1 1/2 lbs kielbasa, 3-inch lengths

Steps:

  • Preheat oven to 300ºF.
  • Place bacon, onion and carrot in heavy large ovenproof Dutch oven over medium-high heat.
  • Saute until onion is tender but not brown, about 5 minutes.
  • Squeeze as much liquid as possible from sauerkraut.
  • Add sauerkraut to Dutch oven.
  • Add wine, stock, caraway seeds and juniper berries.
  • Bring to simmer.
  • Cover tightly, place in oven and bake 1 hour.
  • Add kielbasa to Dutch oven, pushing into sauerkraut.
  • Cover and bake 1 hour.
  • Season to taste with salt and pepper.
  • (Can be prepared 1 day ahead. Cover and refrigerate. Rewarm over medium heat, stirring frequently).

Kapusniak holds a very special place in my heart. My Polish heritage pours love and tradition into making this Polish Sauerkraut Soup.

Cook Time 50 minutes

Number Of Ingredients 12

2 Tablespoons Olive Oil
1 bay leaf
2 cups Frank's Kraut, rinsed and drained
1 teaspoon caraway seed (optional)
1 pound Polska Kielbasa, sliced
4 stalks celery, chopped
3 carrots, sliced
2 cups white potatoes, diced
2 (32 ounce) containers chicken stock
1/2 teaspoon pepper
1-2 teaspoons salt (to taste)
1 small onion, diced

Steps:

  • In a Dutch oven over medium high heat, add oil and onion. Sauté for about 5 minutes, then add in kielbasa, kraut and caraway seeds. Cook for about 5 minutes more. Add in carrots, celery and potatoes and cook, stirring occasionally for about 10 minutes.
  • Add in chicken stock, cover. When it comes to a boil, turn heat down to medium low. Cook covered for about 30 minutes, or until veggies are desired tenderness.
  • Salt and Pepper to taste. Serve hot with a slice of rye bread.
