1 quart water
1 cup polenta
2 tablespoons unsalted butter, plus more for frying
1/2 cup (1 1/2 ounces) freshly grated Parmigiano-Reggiano cheese
Salt and freshly ground pepper
Olive oil for frying

Steps:

  • Lightly oil a 6-by-10-inch glass or ceramic dish, 3 cups.
  • Bring the water to a boil in a large saucepan. Slowly whisk in the polenta. Cover and cook over low heat, whisking often, until thickened, about 10 minutes.
  • Stir in the butter and cheese, season with salt and pepper and, while hot, pour into the dish. Let stand until room temperature and firm, about 30 minutes. Cover with plastic wrap and refrigerate overnight.
  • Cut the polenta into 1-inch-thick slices. In a large non-stick skillet, melt butter in olive oil. Fry the polenta slices over moderate heat until golden brown and crisp, about 8 minutes per side.

250 grams Cornmeal
1 l Vegetable broth
60 grams dried tomatoes (in oil)
1 garlic clove
2 sprigs rosemary
4 sprigs thyme
olive oil
salt
cayenne pepper

Steps:

  • Chop the tomatoes.
  • Peel the garlic and finely chop.
  • Rinse the rosemary and thyme, pluck the leaves and coarsely chop.
  • Sauté the garlic and tomatoes in 2 tablespoons of olive oil, remove from the heat and stir in herbs.
  • Boil the broth and sprinkle in the cornmeal while stirring with a whisk. Remove from heat, stir in the herb tomato mixture, season with salt and cayenne pepper and let sit for about 10 minutes until it swells, stirring occasionally. Then place on a greased plate about 1-1.5 cm (approximately 1/4-1/2 inch) thick and let cool. Cut into triangles, drizzle with a little olive oil and place on the grill. Grill each side for about 1-2 minutes.
