Steps:

  • How to make the dough:
  • Mix flour and salt in a bowl. In a food processor fitted with a metal blade, pour the mixture. Combine the warm water and sugar in a measuring cup. Sprinkle the yeast over the warm water. Let stand until foamy in appearance, about 5 minutes. Pour the water and oil into the food processor. Process until the mixture becomes a ball.
  • Remove the dough from the food processor and put on lightly floured surface. Slightly knead until smooth. Put in a greased bowl and let rise in a warm place (about 45 minutes).
  • Punch down the dough and let rise for another 45 minutes.
  • Divide the dough into 6 equal pieces. Roll each piece on a clean surface, with a bit of flour if necessary, to a 6-inch circle.
  • Meantime, dust 2 sheet pans lightly with cornmeal. Place the dough disks on the prepared sheet pans and top with sauce and toppings.
  • preheat oven to 500F. Now, youâ??re ready to do the toppings.
  • Brush dough with tomato paste the add sundried tomatoes. Distribute evenly all topping ingredients except cheese. Put a dash of salt and pepper.
  • Add cheese. Bake for 12 - 15 minutes.

500 gramos de harina de fuerza
18 gramos de levadura fresca
1 cucharada postre de sal
4 cucharadas soperas de aceite de oliva
250 mililitros de agua templada

Steps:

  • Pon el agua templada en un vaso, desmenuza la levadura y añádela al agua. Remueve muy bien hasta que quede disuelta. Pon la harina en un bol amplio con la cucharadita de sal, mezcla. Haz un hueco en el medio de la harina y, en él, añade el aceite y la mezcla de la levadura. La harina de fuerza es uno de los ingredientes claves para lograr una masa de pizza esponjosa, haz clic en el enlace para saber Qué es la harina de fuerza y para qué se utiliza.
  • Remueve todo y mezcla, ve amasando hasta que queden todos los ingredientes integrados en forma de masa. Saca la masa a la encimera (previamente enharinada) y continúa amasando durante 8-10 minutos. Ha de quedar una masa compacta y que ya no se pegue en las manos.
  • Forma una bola con la masa de pizza y déjala reposar unos 45 minutos o una hora, tapada con un paño.
  • Cuando haya pasado el tiempo, retira el paño. Verás que la masa de pizza fácil habrá duplicado su volumen.
  • Saca la masa de pizza casera del bol y amásala unos minutos dobándola en sí misma haciendo pliegues con ella.
  • Con esta cantidad de masa, tendrás para preparar dos pizzas caseras. Córtala por la mitad, coge una de las mitades y amásala. Ve estirando la masa de la pizza italiana en la encimera hasta dejarla del grosor que te guste. Hornéala con el horno precalentado al máximo durante unos 6-15 minutos (o hasta que esté dorada). Sácala y añade los ingredientes para que puedas terminar de hornearla. ¡Disfruta!

This is my Grandmother's recipe for Pizza Gain (AKA PizzaGaina, Pizza Gaina, Pizza Rustica, Italian Easter Ham Pie, Italian Ham Pie, Easter Pizza, Pizza Chiena, etc.). There are many varieties out there depending on the region of Italy you are from. My family makes it in their traditional style from their village in Naples (Napoli) Italy. There are some areas that use sausage or hard boiled eggs, this one does not. This is also the recipe for a very large pie. I make it in my roasting pan without the rack in it. It is meant to be divied up & shared. I give a hunk to about 6 different people. The story, as its been told to me, is that during Lent & the 40 days of fasting... this Pizza Gaina was made by the Italian women on Good Friday as an abundance of meat & richness that was abstained during Lent. It was prepared, cooked, and chilled on Good Friday, but could not be cut & eaten before noon on Easter Saturday. Although some people serve it on Easter Sunday. Many Easter dishes were made in advance so the local Priest could come and Bless the prepared foods for the Feast of Easter. My family would all gather at my Grandparents house on Saturday & enjoy it together with our Aunts, Uncles, & cousins. It's a tradition that I'm glad to continue to keep those memories going. You can make your own pizza dough for this or purchase it. I sometime buy it at our local pizzeria. This is served chilled. When heated, becomes runny. Also, I cut up all the meats & mozzarella the night before so it's ready to go Friday. I also put a heat-proof oven liner on my bottom rack in case anything oozes out. * Want to specify almost everything is cubed or cut to little slices cubed... Also, please read the ingredients thoroughly, like the capicola is the HOT capicola, proscuittini isn't listed so I made the notation... etc. ** See photos for stages of preparation from start to finish ** Also, for ingredients, I was able to find all of the meats, fresh basket cheese, and fresh mozzarella at the deli-counter in my local supermarket and they are also found in Italian Specialty Shops or Deli's.
