1 pound pizza dough, at room temperature for at least 1 hour
1/2 to 1 cup sauce: tomato sauce, white sauce, or other spread
2 to 3 cups other toppings: sautéed onions, sautéed mushrooms, pepperoni, cooked sausage, cooked bacon, diced peppers, leftover veggies, or any other favorite toppings
1 to 2 cups shredded or sliced cheese (4 to 8 ounces) such as mozzarella, Monterey Jack, provolone, fontina, or any other favorite
Cornmeal or all-purpose flour (optional)

Steps:

  • Heat the oven to 550°F or higher. Arrange a rack in the lower-middle part of the oven (if you have a baking stone, place it on the rack) and heat the oven to 550°F or higher. Don't be afraid to really crank the heat up to its highest setting, as the high heat will help make a crunchier and more flavorful crust. Let the oven heat for at least 30 minutes.
  • Divide the dough in half. One pound of dough makes 2 (10-inch) pizzas. Divide the dough in half and cover one half with an upside-down bowl or a clean kitchen towel while you prepare the first pizza.
  • Roll out the dough.Method #1: Pizza Baked on Parchment: Tear off a large piece of parchment paper roughly 12 inches long. Working with one piece of the dough at a time, form it into a large disk with your hands and place it on the parchment. Use your hands or a rolling pin to flatten the dough until it is 1/4-inch thick or less. If the dough starts to shrink back, let it rest for 5 minutes and then continue rolling.Method #2: Pizza with Cornmeal or Flour and a Baking Stone: Sprinkle a handful of cornmeal or flour on a pizza peel or on an upside-down rimmed baking sheet. Working with one piece of the dough at a time, form it into a large disk with your hands and place it on the peel. Use your hands or a rolling pin to flatten the dough until it is 1/4-inch thick or less. Shake the peel or baking sheet frequently as you shape to make sure the dough isn't sticking. If the dough starts to shrink back, let it rest for 5 minutes and then continue rolling.Method #3: Pizza Baked on a Baking Sheet: Brush a thin film of olive oil on a baking sheet. Working with one piece of the dough at a time, form it into a large disk with your hands and place it on the baking sheet. Use your hands or a rolling pin to flatten the dough until it is 1/4-inch thick or less. If the dough starts to shrink back, let it rest for 5 minutes and then continue rolling.
  • Top the pizza. Spoon half of the sauce onto the center of the pizza and use the back of the spoon to spread it out to the edges. Pile on half of the toppings and half of the cheese.
  • Bake the pizza. Using a pizza peel or the back side of a baking sheet, slide your pizza (with the parchment or with the cornmeal) onto the baking stone. If you don't have a baking stone, bake the pizza right on the baking sheet. Bake for 5 minutes, then rotate the pizza. If using parchment, slide it out from under the pizza and discard. Bake until the crust is golden-brown and the cheese is melted and browned in spots, 3 to 5 minutes more.
  • Slice and serve. Transfer the pizza to a cooling rack and let cool slightly, just until you're able to handle it. Transfer to a cutting board, slice into pieces, and serve. Repeat making a second pizza with the remaining dough, cheese, and toppings.

If you can't find yeast in stores right now, you can still make pizza from scratch without yeast, & bonus — the dough doesn't have to rise.

Number Of Ingredients 13

2 cups all-purpose flour
plus more for dusting
2 teaspoons baking powder
¼ teaspoon baking soda
1 teaspoon kosher salt
½ teaspoon granulated sugar
¾ cup warm water (between 100˚F to 110˚F)
2 tablespoons olive oil
1 tablespoon cornmeal or semolina flour
Preferred pizza toppings
such as sauce
shredded cheese(s)
vegetables and meats

Steps:

  • Preheat oven to 450°F and place a pizza stone or flat/inverted baking sheet inside
  • Once oven is preheated, let pan heat for at least 15 minutes
  • In a medium bowl, sift flour, baking powder and soda, salt, and sugar
  • Add warm water and olive oil
  • Stir to combine with a wooden spoon
  • The dough will be shaggy
  • Combine dough together with your hands and knead for 1 to 2 minutes until smooth
  • If the dough feels sticky, add a light sprinkle of flour and knead until tacky to touch
  • Turn out the dough onto a lightly floured work surface
  • Using a rolling pin, roll dough to desired shape and size using the dimensions of your preheated pizza stone or pan as a guide
  • When your pan is thoroughly preheated, sprinkle evenly with cornmeal or semolina
  • Carefully transfer rolled-out dough to the pan and parbake for 5 minutes to set
  • Top parbaked crust with toppings of choice and bake an additional 10 to 12 minutes until cheese is melted and crust is lightly browned
  • Slice and serve

  • Preheat oven to 450ºF. Place an inverted rimmed baking sheet on a middle rack.Bring a large skillet to medium-high heat and add the butter. When the butter is melted, add the onions to the skillet along with a pinch of salt. Cook, stirring the onions occasionally for 10 minutes. Reduce the heat to medium and continue to cook for 10 more minutes, stirring occasionally until the onions are dark golden brown. Set aside when finished.Meanwhile, preheat your oven broiler. Put the halved jalapenos on a small baking sheet and broil on an upper rack for 10–15 minutes until the jalapenos are soft and begin to brown on the edges. Set aside and dice them up when they’re cooled off.Place a large piece of parchment (one that will fit on top of an inverted rimmed baking sheet with a little overhang) on the counter. Spread your dough out on the parchment in an oblong shape or a rectangle, if you like. Make sure the dough won’t be bigger than the back of that baking sheet.Spread the bbq sauce evenly over the pizza dough, leaving an inch or so around the border. Add the pulled pork, caramelized onions, and diced roasted jalapenos to the dough, distributing them evenly. Sprinkle on the cheese.Take out a second rimmed baking sheet and turn it upside down. Carefully slide the parchment with the pizza onto the inverted baking sheet. Then transfer it to the really hot inverted baking sheet in your oven. (If you only have one baking sheet, see note below.)Bake for 15–20 minutes until the crust is puffed up and turning light golden brown underneath and the cheese and toppings are heated through and the cheese is beginning to get brown spots as well.Remove from the oven and let it sit for 5 minutes or so before slicing and serving. Enjoy!Note: You’ll get a better cooked crust with a crispier bottom if you cook the pizza on a preheated surface. If you only have one rimmed baking sheet or think my crazy method is too complicated, just slide the parchment into a rimmed baking sheet (not inverted) and put it in the oven.
