Best Basic Pizza Dough Recipe - The Pioneer Woman image

1/4-ounce package active dry yeast (about 2 1/4 teaspoons)

Steps:

  • Sprinkle the yeast over the warm water in the bowl of a stand mixer. Whisk to combine and then let sit until bubbles have formed on the top, about 10 minutes. Add the flour, olive oil and salt and mix with the dough hook on medium-low speed until the dough comes together, about 2 minutes. Increase the speed to medium-high and knead until the dough is shiny and elastic, about 10 minutes. Cover the bowl loosely with plastic wrap and let sit in a warm place until the dough is doubled in size, about 1 hour. Punch down the dough, cover tightly with plastic wrap and let sit in a warm place until the dough is doubled in size, about 1 hour. Punch down the dough, cover tightly with plastic wrap and refrigerate for at least 8 hours and up to 3 days before making your pizzas. Makes enough dough for 2 12-inch pizzas.

Cornmeal, for dusting

1/4 c.

pesto

3 c.

shredded low-moisture whole-milk mozzarella cheese

6 tbsp.

grated parmesan cheese

2 c.

baby heirloom tomatoes, halved or quartered if large

1 tbsp.

extra-virgin olive oil

2 tbsp.

aged balsamic vinegar

Kosher salt and black pepper, to taste

3 oz.

goat cheese, crumbled

Steps:

    about 1 hour. Meanwhile, place a pizza stone or an inverted baking sheet on the oven floor and preheat to 500°. On a lightly floured surface, stretch or roll out 1 piece of dough into a 12-inch round, about 1/8 inch thick. Dust a pizza peel or another inverted baking sheet with cornmeal and lay the dough on top. Spread half of the pesto on the dough, leaving a 1/2-inch border around the edge. Sprinkle with half each of the mozzarella
    and parmesan. Slide the pizza onto the hot stone or baking sheet and bake until the crust is browned and the cheese is melted, 10 to 12 minutes. Repeat with the remaining dough and toppings. Toss the tomatoes, olive oil and vinegar in a bowl and season with salt and pepper. Sprinkle on the pizzas along with the goat cheese and basil.

Place both halves on a baking sheet lined with parchment or a baking mat. Preheat oven to 415 degrees, then start on the pizza toppings.In a large skillet over medium-high heat, saute mushrooms and garlic in the butter for 2 minutes, then pour in the wine and season with salt and pepper. Allow to continue cooking for 5-7 minutes, until mushrooms are cooked down and liquid is mostly gone. Remove from heat and set aside.To build the pizzas: Brush a thin layer of olive oil in the center part of each half of puffed pastry.On each half, sprinkle on half the cheese so that it covers all but a 1/2 inch border all around the pastry.On one half, sprinkle on the cooked mushrooms. On the other half, sprinkle on the halved tomatoes. Press both mushrooms and tomatoes lightly into the cheese.Place the pan in the oven and bake for 15 minutes pastry could go crazy and puff up in areas here and there, but don't worry! It'll be fine. Remove from the oven and sprinkle the goat cheese crumbles on both halves. Allow the pizzas to sit for 10 minutes. If there are any big air bubbles/puffs, just give them a little smush or wait and they'll calm down.Sprinkle on basil, slice into pieces, and serve!

  • Preheat the oven to 400°. Roll out the pizza dough on a floured surface until it’s a very flat, large rectangle, about 11 by 18 inches. Spread with the marinara sauce, leaving a 1-inch border all around, then sprinkle with the parmesan, oregano and salt. Evenly top with the mozzarella slices and half of the pepperoni. Unwrap the string cheese and arrange it in a line on one long edge of the dough. Starting from that long edge, roll up the dough as tightly as possible so that the string cheese winds up in the middle of the roll. Pinch the seam of the dough to seal, then flip seam-side down. Slice into 1-inch pieces with a serrated knife and place the rolls cut-side up in a 12-inch round baking dish or cast-iron skillet.
