Christmas cookies are always a favorite with Southern Living readers, so it is little wonder that this recipe for Basic Butter Cookie Dough became a holiday favorite. Ellender Mills of Raleigh, North Carolina, sent in this recipe, which ran in December, 1995, and described how she divided the dough into quarters, adding different flavorings, frostings, and garnishes to each quarter to create a wonderful assortment of Christmas cookies. The basic recipe alone bakes up a delicious batch of cookies, but with this variation for Pinwheels, you can easily create a cookie that is sure to catch Santa's attention. A little unsweetened chocolate added to this signature dough, and you've got a swirly treat. If you love a good Christmas cookie, we bet you'll be filling decorative cookie tins, boxes, and jars with these Christmas pinwheel cookies as gifts throughout the holidays (along with our other festive cookies!). Any way your cookie cutter cuts them, you can't beat the taste of Christmas cookies for the holiday season. Make a batch of the Basic Butter Cookie Dough and divide it into fourths. The recipe for Pinwheels will use just one fourth, and you can freeze the remaining portions for other cookie variations.

1/4 (1 1/8-lb.) Basic Butter Cookie Dough
1 (1-ounce) square unsweetened chocolate, melted

Steps:

  • Divide Basic Butter Cookie Dough in half. Knead melted unsweetened chocolate into 1 portion until well blended.
  • Roll each portion into a 12- x 9-inch rectangle on wax paper. Invert chocolate dough onto plain dough; peel off wax paper. Press chocolate dough firmly onto plain dough with a rolling pin. Roll up, in a jellyroll fashion, starting with the long side; cover and chill 1 hour or until firm.
  • Cut the dough into 1/4-inch slices; place on lightly greased cookie sheets.
  • Bake at 350° for 10 to 12 minutes or until lightly browned. Remove cookies to wire racks to cool.

all-purpose flour

1 tsp.

baking powder

kosher salt

1 c.

(2 sticks) butter, softened

1 c.

granulated sugar

large egg

3/4 tsp.

almond extract

Red food coloring

Steps:

  • In a medium bowl, whisk together flour, baking powder, and salt. In a large bowl using a hand mixer (or in the bowl of a stand mixer, fitted with a paddle attachment), beat butter and sugar together. Add egg and beat until incorporated, then add extract. Add dry ingredients and beat until just combined.  Divide dough in half, keeping one half in mixing bowl. Add red food coloring and mix until desired color is reached. Shape each dough into a square that is roughly ½” thick. Wrap in plastic wrap and refrigerate until firm, about 30 minutes.  Place red dough between two sheets of parchment paper and roll into a rectangle that’s about 1/4" thick. Repeat with white dough. Take top sheet of parchment paper off of each dough. Place red dough on top of white dough, dough sides facing each other. Gently press on top of dough to help seal together.  Remove top parchment paper and trim sides to match up evenly. Starting on a long side, use the bottom parchment paper to help roll dough tightly in to a log. Roll log on the counter a few times to help seal the edge. Wrap in plastic wrap and refrigerate until firm, at least 1 hour and up to overnight.  Preheat oven to 350°. Line 2 large baking sheets with parchment paper. Place sprinkles on a medium plate. Using a sharp knife, slice cookies 1/2” thick and roll edges in sprinkles. Place on baking sheets 2” apart.  Bake until edges are set and just starting to turn golden, 10 minutes.

  • In a large bowl, cream butter and sugars until light and fluffy. Add the eggs, one at a time, beating well after each. Beat in vanilla. Combine the flour, baking powder and salt; gradually add to the creamed mixture and mix well. , Divide dough in half; add cocoa to one portion. Divide each portion in half. On a baking sheet, roll out each portion between waxed paper into a 12x10-in. rectangle. Refrigerate for 30 minutes. , Remove waxed paper. Place one chocolate rectangle over a plain rectangle. Roll up tightly, jelly-roll style, starting with a long side; wrap in plastic. Repeat with remaining dough. Refrigerate for 2 hours or until firm. Unwrap and cut into 1/4-in. slices. , Place 2 in. apart on lightly greased baking sheets. Bake at 350° for 10-12 minutes or until set. Remove to wire racks to cool.
