1 (15 ounce) can pinto beans, drained
1 medium sized onion, chopped
4 garlic cloves, chopped
1/2 cup vegetable stock
1 (15 ounce) can diced tomatoes, drained
1 1/2 lbs kale or 1 1/2 lbs collard greens
2 tablespoons lemon juice
1 tablespoon olive oil
salt
pepper

Steps:

  • Remove stems from greens, rinse well and chop into large pieces.
  • Saute onion in water or a little bit of olive oil in large pan over medium low heat for 5 minutes, stirring frequently.
  • Add garlic and continue to saute for another minute.
  • Add vegetable stock, tomatoes, pinto beans and greens and simmer until they are tender, about 15 minutes.
  • Season with salt and pepper. Remove from heat and stir in olive oil and lemon juice. Serve hot.

Number Of Ingredients 9

1 medium onion, (chopped)
4 cloves garlic, (chopped)
1-1/2 pounds collard greens
1/2 cup plus 3 tablespoons vegetable broth
1 can 15 oz tomatoes, diced (drained)
1 3/4 cups pinto beans or one 15 oz. can pinto beans; drained
2 tablespoon lemon juice
2 tablespoon olive oil
Salt and pepper to taste

Steps:

  • Chop onion and garlic. Remove stems from collard greens, rinse, and chop the greens.
  • Heat 3 tablespoon vegetable broth in large saute pan. When the broth begins to steam, add onions and garlic and saute for 3-4 minutes.
  • Add ½ cup vegetable broth, tomatoes, and pinto beans to the onions and garlic mixture and bring to a boil.
  • Add collard greens and simmer for 5 minutes. Season with salt and pepper.
  • Remove from heat and stir in olive oil and lemon juice. Serve hot.
