This is a recipe from my childhood that my Aunt Frances used to make. It is delicious, cool and fresh tasting.

16 ounce(s) crushed pineapple
1/4 cup(s) lemon juice
1/2 cup(s) sugar
2 tablespoon(s) flour
3 - eggs, beaten
1 - graham cracker or baked pie crust
8 ounce(s) cream cheese, room temperature
1 tablespoon(s) milk or cream

Steps:

  • Mix first 5 ingredients together in a double boiler, cook over low-medium heat until thickened. Pour into pie crust. Place in refrigerator to cool. Top with cream cheese whipped with milk to soften. Refrigerate an hour before serving.

Custard pie is brightened with crushed pineapple in this fun and easy pie. When I was little, my best-friends great-aunt Tootie would make this pie for the family each and every summer at her home in Iowa and it became a favorite of my family too!

Yield 1 - 9 inch pie

Number Of Ingredients 11

? cup white sugar
1 tablespoon cornstarch
1 (8 ounce) can crushed pineapple, with juice
½ cup milk
½ teaspoon vanilla extract
1 (8 ounce) package cream cheese, softened
½ cup white sugar
½ teaspoon salt
2 eggs
1 (9 inch) refrigerated pie crust
1 pinch ground nutmeg

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Stir together 1/3 cup of sugar and cornstarch in a small saucepan. Stir in the crushed pineapple with the juice, then bring to a simmer over medium heat. Cook and stir until the mixture has thickened and turned clear. Remove from the heat and allow to cool.
  • While the pineapple mixture is cooling, place the milk, vanilla extract, cream cheese, 1/2 cup sugar, and salt into a blender. Pulse until the mixture is combined, then add an egg and pulse until smooth. Add the remaining egg, and pulse again until the mixture is smooth. Pour into the pie shell and smooth the top. Carefully pour the pineapple mixture over the pie until evenly covered, then sprinkle with a pinch of nutmeg.
  • Bake in the preheated oven for 10 minutes, then reduce the heat to 325 degrees F (165 degrees C), and continue baking until a knife inserted into the center comes out clean, about 40 minutes more. Cool to room temperature, then refrigerate for several hours before serving cold.

Refrigerate 30 minutes., In a large bowl, combine sugar and flour. Add the corn syrup, coconut, pineapple, eggs and vanilla; mix well. Pour into crust. Drizzle with butter. , Bake until a knife inserted in the center comes out clean, 50-55 minutes. Cover pie loosely with foil during the last 30 minutes if needed to prevent overbrowning. Remove foil.   • Meringue: Beat egg whites until soft peaks form. add the cream of tartar, beat again to mix in. Slowly add the sugar by Tablespoons until all has been incorporated and stiff peak form.
