This goes back many years it is one of the better pie pastry recipes, the vinegar and the egg works magic to create a flakey easy to work with pastry! :)

Prep Time 15 minutes

Yield 1-2 pie crusts

Number Of Ingredients 6

1 egg
3 cups flour
3/4 teaspoon salt (can use 1 teaspoon)
1 1/2 cups cold vegetable shortening or 1 1/2 cups lard
1 tablespoon vinegar
5 tablespoons very cold water

Steps:

  • In a bowl, mix together the salt and flour.
  • With a pastry blender, cut in cold shortening until the size of peas.
  • In a small cup, beat egg with a fork, add in the vinegar and water; whisk until well blended.
  • Add the water/egg mixture gradually to the flour mixture.
  • Shape into ball.
  • Refrigerate 1 or more hours.
  • Roll out dough, use for 2 (8" pie crust) OR 1 large deep dish pie crusts.

1/2 c.

(1 stick) butter, cut into 1/2" pieces

1 1/2 c.

all-purpose flour, plus more for surface

1 tbsp.

granulated sugar

1/4 tsp.

kosher salt

1/2 tbsp.

apple cider vinegar

4 tbsp.

ice water (or more, if needed)

Steps:

  • Place butter and flour into freezer for 30 minutes before starting crust process. (You want them SUPER cold.) In a large bowl, whisk together flour, sugar, and salt. (Alternately, you can do this in a food processor.) Add butter and, using your hands, mix together until pea-sized and some slightly larger pieces form. Add vinegar and then ice water, 1 tablespoon at a time, until dough starts to come together and is moist but not wet and sticky (test by squeezing some with your fingers). Mixture will be crumbly. Turn dough onto a lightly floured surface and form into a ball. Flatten into a disk (making sure there are no/minimal cracks). Cover with plastic wrap and refrigerate until dough is very cold, at least 2 hours or up to overnight. (Making a top crust? This recipe doubles easily!)

  • In a large bowl, with a pastry cutter, gradually work the Crisco into the flour for about 3 or 4 minutes until it resembles a coarse meal. In a small bowl, beat an egg with a fork and then pour it into the flour/shortening mixture. Add 5 tablespoons of cold water, 1 tablespoon of white vinegar and 1 teaspoon of salt. Stir together gently until all of the ingredients are incorporated. Separate the dough into thirds. ***Note: Separating it into thirds will result in three thin crusts. If you prefer a more substantial crust, separate it in half.*** Form 3 evenly sized balls of dough and place each dough into a large Ziploc bag. Using a rolling pin, slightly flatten each ball of dough (about ½ inch thick) to make rolling easier later. Seal the bags and place them in the freezer until you need them. (If you will be using it immediately it’s still a good idea to put in the freezer for about 15 to 20 minutes to chill.) When you are ready to use the dough to make a crust, remove from the freezer and allow to thaw for 15 minutes. On a floured surface roll the dough, starting at the center and working your way out. (Sprinkle some flour over top of the dough if it’s a bit too moist.) If the dough is sticking to the countertop use a metal spatula and carefully scrape it up and flip it over and continue rolling until it’s about ½ inch larger in diameter than your pie pan. With a spatula, lift the dough carefully from the surface of the counter into the pie pan. Gently press the dough against the corner of the pan. Go around the pie pan pinching and tucking the dough to make a clean edge.
