HAM & PICKLE WRAPS RECIPE: HOW TO MAKE IT
I decided to try this recipe on my card club, and it was a big success. They loved it. This ham pickle roll up recipe can be swapped around and changed in so many different ways and always turns out as an awesome appetizer or great-looking centerpiece over a hand of cards.

- In a small bowl, combine cream cheese and dressing mix. Spread over ham slices. Place a pickle on each ham slice. Roll up tightly; wrap in plastic. Refrigerate for at least 1 hour or until firm. Cut each wrap into six slices.

Steps:
- Place turkey in a large pot and pour over pickle juice and 6 cups water. Add salt and sugar and season generously with pepper. Cover with plastic wrap and refrigerate 8 to 12 hours. Preheat oven to 350° with rack positioned in lower third. Remove turkey from brine and rinse under cold water; pat dry with paper towels. Generously season turkey cavity with salt and pepper and stuff with lemons, garlic, onion, and dill. In a small bowl, whisk together melted butter and Old Bay. Brush all over outside of turkey and season with salt and pepper. Tie legs together with kitchen twine and tuck wing tips under body. Place turkey breast-side up on a roasting rack set inside a large roasting pan. Bake turkey, basting every 45 minutes with pan juices, until the meat at the thigh registers 165°, 3 to 4 hours. Let rest 20 minutes before slicing. Serve over pickle chips.

- In a small pot over medium heat, combine white vinegar, sugar, allspice and salt. Stir well until the liquid is simmering and the sugar has completely dissolved. Pour pickling liquid over red onion and cucumbers and stir to ensure everything is evenly coated. Allow to cool to room temperature, then cover with plastic wrap (press the plastic wrap down onto the cucumbers so there is no air) and refrigerate. Chill for at least 4 hours to cool completely before serving.

- Place the beets in a large pot and add enough water just to cover. Bring to a boil over medium-high heat. Cover and reduce the heat to medium-low. Cook for 30 to 40 minutes. Remove the beets from the water and let rest until cool enough to handle. Using a paper towel, rub the beets all over to remove their skins. Cut the beets into wedges and divide them between two pint-sized canning jars, leaving 1-inch of space at the top of the jar. Add the dill sprigs. In a medium saucepan, combine the vinegar, sugar, salt, garlic, peppercorns, mustard seeds and 1½ cups of water. Bring to a boil over medium-high heat and stir well to dissolve the sugar. Remove from the heat immediately and pour over the beets, stopping at ½ inch from the rim of the jar. Cover the jars and let cool to room temperature. Transfer to the refrigerator to cool completely.
