This is a copycat crockpot recipe for P F Chang's Pepper Steak (Black pepper-garlic sauce marinated flank steak, onions and bell peppers).

1 1/2 lbs beef sirloin
4 teaspoons garlic powder
4 teaspoons fresh ground black pepper
2 1/2 tablespoons vegetable oil
1 teaspoon beef bouillon (1 cube)
1/4 cup hot water
1/2 tablespoon cornstarch
1/3 cup onion, chopped
1 green bell pepper, seeds removed
1 red bell pepper, seeds removed
0.5 (7 ounce) can stewed tomatoes, with liquid
2 1/2 tablespoons soy sauce
1 teaspoon white sugar
1/2 teaspoon salt

Steps:

  • Combine garlic powder and black pepper in a medium bowl. Cut beef across the grain into 1 1/2 inch long and 1 inch wide cubes. Mix with garlic powder/black pepper mixture and set aside. Slice bell peppers and onion into cubes. Dissolve bouillon in hot water and mix in cornstarch until dissolved.
  • Heat a wok or large skillet over medium heat. Heat the oil to hot and brown the seasoned beef cubes. Transfer stir fried meat to a crock pot. Give a quick stir to bouillon mixture and pour into the slow cooker.
  • Stir in onion, bell peppers, stewed tomatoes, soy sauce, sugar and salt. Cover and cook on High for 3 to 4 hours or cook on Low for 6 to 8 hours. Remove and serve crock pot pepper steak with rice or noodles.

Marinated grilled flank steak, paired with grilled peppers, onion and pineapple for a delicious twist on the classic fajita

3/4 cup pineapple juice
1/2 cup P.F. Chang's® Home Menu Soy Sauce
1/4 cup vegetable oil
1 teaspoon grated fresh ginger, grated or finely minced
2 cloves garlic, grated or finely minced
2 teaspoons sambal oelek (red chili paste)
1 pound beef flank steak
1/4 teaspoon kosher salt
1/8 teaspoon freshly-cracked black pepper
1 green bell pepper, seeded and cut into quarters
1 red bell pepper, seeded and cut into quarters
1 medium onion, sliced into 1/4-inch thick slices
4 slices fresh pineapple, 1/4-inch thick, peeled
8 flour tortillas (6 inch), warmed
chopped cilantro, optional

Steps:

  • Combine pineapple juice, soy sauce, oil, garlic, ginger and chili paste; reserve ½ cup of marinade for grilling. Place steak in resealable food storage bag and add remaining marinade. Refrigerate 3 to 4 hours.
  • Preheat grill for medium heat. Season steak with salt and pepper. Add steak to grill; cook 7 minutes.
  • Turn steak and cook 5 minutes or to desired doneness. Brush peppers, onion slices and pineapple with reserved marinade. Add to grill, cook about 4 minutes per side or until tender. Baste with reserved marinade as desired. Remove from grill; let steak stand 5 minutes, covered.
  • Cut steak, peppers, onions and pineapple into thin slices. Slice steak against the grain when cutting; remove the core from pineapple if desired. Divide steak, peppers, onion and pineapple evenly between tortillas. Garnish with chopped cilantro if desired; serve.

  • Make sauce: In a medium bowl, whisk the soy sauce with the vinegar, sugar, and cornstarch. Set aside.  In a large skillet over high heat, heat 1 tablespoon oil. Add flank steak, season with salt, and cook until cooked through and seared on all sides, about 8 minutes. Remove steak to a plate. Add 1 tablespoon remaining oil and red and green bell peppers to the skillet. Cook until softened, about 4 minutes. Add the garlic and ginger and cook stirring until fragrant. Return the beef to the skillet and pour over prepared sauce. Cook, stirring, until the sauce is glossy about 2 minutes more.  Serve with rice.
