Steps:

  • Heat oven to 400°F. Line baking sheet with parchment paper. Cook bacon in large skillet on medium-high, stirring often, until crisp, 6 to 8 minutes; transfer to paper towel-lined plate. Spoon off and discard all but 2 tablespoons bacon drippings from skillet. Add onions to skillet and cook, covered, stirring occasionally, 12 minutes. Uncover and cook, stirring often, until very tender and golden brown, 12 to 15 minutes more (add a splash of water to skillet if necessary to help release drippings). Stir in ¼ teaspoon pepper. Unfold pastry onto prepared baking sheet and spread onion mixture on top, leaving ½-inch border all around. Top with pear slices and bacon, then crumble blue cheese on top. Bake until golden and crisp along edges, 20 to 25 minutes.

<p>Frozen puff pastry is the home cook&rsquo;s secret to baking impressive desserts with ease. Here we top the pastry with thinly sliced pears, then glaze them with a mixture of maple syrup and butter. Serve it with a scoop of vanilla ice cream or some whipped cream, if you like.</p>

All-purpose flour for dusting
1 sheet frozen puff pastry (about 14 oz./440 g), thawed
1 Bosc pear, thinly sliced lengthwise on a mandoline
1 egg beaten with 1 Tbs. water
1/3 cup (3 3/4 oz./115 g) maple syrup
2 Tbs. unsalted butter
1 tsp. ground cinnamon (optional)
Confectioners&rsquo; sugar for dusting
Vanilla ice cream for serving (optional)

Steps:

  • Preheat an oven to 350&#176;F (180&#176;C). Line a baking sheet with parchment paper.
  • On a lightly floured surface, roll out the puff pastry into a 14-by-11-inch (35-by-28-cm) rectangle. Transfer the pastry to the prepared baking sheet. Arrange the pear slices in a single layer over the pastry, leaving a 1-inch (2.5-cm) border uncovered. Brush the entire surface with the egg wash. Bake for 15 minutes. (The pastry will still be pale.)
  • Meanwhile, in a small saucepan over medium heat, combine the maple syrup, butter and cinnamon and heat, stirring, until the butter is melted and the mixture is thoroughly combined and quite runny, about 2 minutes.
  • Remove the tart from the oven and brush the pears lightly with about one-fourth of the maple syrup mixture. Continue baking until the pears are tender and the pastry is golden brown, about 15 minutes more. Remove from the oven. If more browning is desired, preheat the broiler. Place the tart under the broiler until the pastry is a deeper golden color, 30 seconds to 1 minute, watching it carefully to prevent the pastry from burning.
  • Remove the tart from the oven and brush the pears with the remaining maple syrup mixture. Let cool slightly. Just before serving, dust the tart lightly with confectioners&rsquo; sugar. Cut into slices and serve warm or at room temperature with vanilla ice cream. Serves 6 to 8.

    1. Preheat the oven to 200°C/400°F/gas 6.
    2. Put a 21cm-diameter frying pan with an ovenproof handle on a hob over a medium heat. Add the sugar and heat to a lovely caramel colour, stirring constantly.
    3. Chop the butter into cubes, then add to the pan with the ginger and cinnamon, and stir to combine.
    4. Peel and core the pears, cut into wedges, then place in the caramel and spoon over the mixture. Turn the heat down and cook for 5 to 10 minutes, or until the pears are just tender and cooked but retain their shape.
    5. Remove from the heat and cool slightly, then arrange the pears prettily in the pan.
    6. Roll out the pastry to about 5mm thick and cut a disc slightly bigger than your pan (about 24cm).
    7. Carefully place the pastry disc on top of the pears and caramel, then carefully tuck it snugly around the outside of the pears and down into the sides of the pan.
    8. Bake the pie for 30 to 40 minutes, or until the pastry is golden brown and puffed up.
    9. Remove from the oven and leave for 10 minutes. Run a knife around the edge, place a large plate over the top and carefully turn the tart onto the plate. Serve with double cream.
