GLUTEN FREE PEANUT BUTTER BLOSSOMS - FLOURLESS!
A super simple gluten free peanut butter blossoms recipe that is flourless and quick to bake. With only a few ingredients and a couple of quick steps you can have these gluten free peanut butter blossoms in the oven in no time.

Steps:
- Preheat oven to 350°F (180°C). Line two baking sheets with parchment paper; set aside.
- Add the peanut butter, sugars, egg, salt and vanilla to a medium mixing bowl.
- Mix until combined. Chill for 1 hour.
- After chilled, roll peanut butter blossoms cookie dough into 1" balls. Roll them in granulated sugar.
- Place on the baking sheet 2 inches apart and bake for 8-10 minutes or until the bottoms start to brown.
- Remove from the oven and immediate place kiss, or your favorite chocolate, on top and press down slightly.
- Store in an airtight container for up to 4 days.

- Preheat oven to 325 degrees F (165 degrees C).
- Stir peanut butter, 1 1/4 cup white sugar, and eggs together in a bowl; roll into small balls.
- Place remaining 1/2 cup white sugar in a bowl and roll balls in sugar until coated. Arrange balls 1 inch apart on a baking sheet.
- Bake in the preheated oven until very lightly browned on the bottom and the edges are beginning to crack, 12 to 14 minutes. Immediately press a chocolate kiss into the center of each cookie. Cool on the baking sheet for 1 to 2 minutes; transfer to a wire rack to cool completely, about 15 minutes.

- In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda and salt. Set aside. Place the softened butter, peanut butter and sugars in a medium bowl (or the bowl of a stand mixer). With a hand mixer (or stand mixer with a paddle attachment), beat until creamy and light, 2-3 minutes. Add the egg and vanilla extract mix well to combine. Add the flour mixture in 3-4 batches, mixing on low to combine completely in between each addition. Scrape the bottom and sides of the bowl as needed. Line 2 large baking sheets with parchment paper. Place the sugar that you plan to use (granulated or sanding sugar) on a small plate. Preheat the oven to 350 degrees. Scoop mounded balls of dough (about 1 ½ tablespoons each) and place them on a cutting board. Grease your hands and roll the scoops into balls. Roll each ball in the sugar of choice. Divide the balls amongst the two baking sheets. Bake for 9-11 minutes, just until the bottom edges look light brown, rotating the trays from top to bottom oven racks, half-way through baking. Remove from the oven and immediately press a Hershey kiss into the center of each cookie. (the cookie will crack slightly and that is ok!) Let the cookies cool for 2 minutes on the baking sheet, then transfer to a cooling rack to cool completely.
