I got this recipe from About.com. It was posted by Diana Rattray. I was looking for a way to use up my peaches and plums and there wasn't a recipe like this posted here. Don't forget to use proper canning techniques. Make sure everything is sterile!!

Yield 9 half pint jars

Number Of Ingredients 5

2 1/2 cups finely chopped peeled and pitted peaches
1 1/2 cups finely chopped pitted plums
4 tablespoons lemon juice
7 1/2 cups sugar
2 (3 ounce) envelopes certo liquid pectin

Steps:

  • In a large pot combine peaches, plums, lemon juice and sugar.
  • Cook, stiring, over med-high heat until sugar is melted.
  • Bring to a rolling boil.
  • Boil, stirring constantly, for 1 minute.
  • Add 2 pouches of Certo, stirring constantly.
  • Return to a rolling boil.
  • Boil, stirring constantly for 1 minute.
  • Remove from heat.
  • Skim off any foam with a metal spoon.
  • Fill Hot sterile jars leaving 1/4 inch headspace.
  • Wipe off jar rims with damp cloth.
  • Top with 2 piece seal and ring.
  • Hot water bath jars for 10 minutes.

Filling:
8 medium peaches (about 2 lb.), peeled, pitted and sliced
10 to 12 small plums (about 2 lb.), pitted and sliced
2 teaspoons lemon juice
¼ cup honey
¼ cup instant tapioca
Pinch of salt
Topping:
½ cup all-purpose flour
½ cup old-fashioned oats (not instant)
2 tablespoons sugar
½ teaspoon cinnamon
1 pinch of salt
4 tablespoons unsalted butter, melted and cooled

Steps:

  • Preheat oven to 425°F. Mist a 2-quart baking dish with cooking spray. Line a rimmed baking sheet with foil. In a large bowl, combine peaches, plums, lemon juice, honey, tapioca and salt, mixing well. Let stand for 10 minutes, stirring occasionally.
  • Make topping: Combine flour, oats, sugar, cinnamon and salt in a large bowl. Add butter and use fingertips or a fork to mix until crumbly. Refrigerate until ready to use.
  • Transfer fruit mixture to baking dish. Sprinkle topping over fruit. Place dish on baking sheet. Bake until fruit is softened and topping is golden brown, 40 to 45 minutes. Cool slightly before serving.
