Light Pasta Alfredo With Roma Tomatoes Recipe by Milagros Cruz image

Make this light Alfredo sauce by using fat-free half and half.

Yield 4

Number Of Ingredients 9

1 tablespoon butter, such as darigold butter
2 small cloves garlic, minced
1 teaspoon all-purpose flour
1 1/2 cup half and half, such as darigold fat free half & half
3/4 cup grated parmigiano-reggiano cheese, divided
4 roma tomatoes, chopped
salt, to taste
pepper, to taste
1 16-ounce package egg pasta

Steps:

  • Melt butter in a saucepan over medium heat. Add minced garlic and sauté for 1 minute. Stir in flour.
  • Gradually add half and half, stirring with a wire whisk until mixture is blended. Cook, stirring constantly, 8 minutes or until mixture is thickened and bubbly.
  • Stir in 1/2 cup Parmigiano-Reggiano cheese, stirring constantly until melted. Add chopped tomatoes, salt, and pepper.
  • In a large saucepan, cook pasta according to package directions. Drain.
  • Return pasta to hot saucepan. Stir in Alfredo sauce mixture. Toss to coat. Sprinkle with remaining 1/4 cup Parmigiano-Reggiano cheese.

I make this recipe as a side dish for homemade macaroni and cheese and Italian pasta dishes. The leftovers work great chopped up and thrown into spaghetti sauce!

Number Of Ingredients 5

8 roma (plum) tomatoes, halved
12 cloves garlic, peeled
4 tablespoons olive oil
¼ cup chopped fresh basil leaves
salt and pepper to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Place the tomato halves in a shallow baking dish in which they can all fit in snugly side by side. Insert the whole cloves of garlic in between the tomatoes. Brush olive oil over the top and sprinkle with basil. Season with salt and pepper.
  • Bake uncovered for 35 to 45 minutes, until tomatoes have softened and are sizzling in the pan with the edges slightly charred. Serve while hot.
