Aubergine pasta | Jamie Oliver vegetarian pasta recipes image

This deliciously simple veggie pasta makes the perfect midweek dinner. Enjoy!

Number Of Ingredients 8

1 small onion
2 cloves of garlic
½ a bunch of fresh basil
2 aubergines
4-6 tablespoons olive oil
1 x 400 g tin of quality chopped tomatoes
500 g dried rigatoni
80 g ricotta cheese

Steps:

    1. Peel and finely chop the onion and garlic. Pick the basil leaves and finely chop the stalks. Trim and cut the aubergine into 2cm slices.
    2. Heat 3 tablespoons of oil in a pan and sweat the onion, garlic and basil stalks for 7 minutes.
    3. Add the tomatoes, season well and bring to a steady simmer. Cook for about 20 minutes.
    4. Meanwhile, fry the aubergine in the remaining oil until golden, then stir into the tomato sauce with most of the basil leaves.
    5. Cook the pasta according to the packet instructions, drain, then stir through the sauce.
    6. Divide between plates and crumble over some ricotta and scatter over the reserved basil leaves before serving.

This bacon and pea pasta has become a quick dinner classic round mine – five minutes and it's done

Number Of Ingredients 9

6 slices higher-welfare smoked streaky bacon or pancetta
1 small bunch fresh mint
100 g Parmesan cheese
1 organic chicken stock cube optional
400 g dried mini shell pasta
olive oil
300 g frozen peas
2 heaped dessertspoons half-fat crème fraîche
1 lemon

Steps:

    1. Finely slice the bacon. Pick the mint leaves and discard the stalks. Finely grate the Parmesan. Bring a large pan of salted water to the boil and drop in the stock cube (if using). Stir until it’s dissolved, then add the mini shells and cook according to the packet instructions. Get a large frying pan over a medium heat and add a good lug of olive oil. Add the bacon to the pan, sprinkle a little pepper over and fry until golden and crisp.
    2. Meanwhile, finely chop your mint leaves. As soon as the bacon is golden, add your frozen peas and give the pan a good shake. After a minute or so, add the crème fraîche and chopped mint to the bacon and peas. Drain the pasta in a colander over a large bowl, reserving some of the cooking water.
    3. Add the pasta to the frying pan. Halve your lemon and squeeze the juice over the pasta. When it’s all bubbling away nicely, remove from the heat. The sauce should be creamy and delicious but if it’s too thick for you, add a splash of the reserved cooking water to thin it out a bit. Add the grated Parmesan and give the pan a shake to mix it in.
    4. Divide your pasta between plates or bowls, or put it on the table in a large serving dish and let everyone help themselves. Lovely with a simply dressed green salad.

    1. Chop the broccoli florets off the stalk.
    2. Cut the woody end off the stalk, halve the stalk lengthways and put into a large pan of boiling salted water with the sausages and whole chilli(es).
    3. Pop the lid on, boil for 5 minutes, then remove, leaving the water on the lowest heat.
    4. Meanwhile, chop the broccoli florets into nice bite-sized chunks and put aside for later.
    5. Once cool enough to handle, finely slice the sausages, broccoli stalk and chilli and place in a large frying pan on a medium heat with 1 tablespoon of oil, the fennel seeds and a pinch of sea salt and black pepper.
    6. Stir and fry while you peel and finely slice the garlic and onions.
    7. Once the sausage is lightly golden, stir in the garlic, followed a minute later by the onions, then pick in the oregano leaves. Cook for 15 minutes, or until softened, stirring occasionally.
    8. Add the vinegar and cook completely away, then pour in the tomatoes, breaking them up with a wooden spoon. Half-fill the tin with water, swirl around and pour into the pan.
    9. Simmer for 15 more minutes, or until thickened, then taste and season to perfection.
    10. Meanwhile, bring the pan of water back up to boil, and cook the pasta according to the packet instructions, adding the broccoli florets for the last 4 minutes.
    11. Drain the pasta and broccoli, reserving a mugful of cooking water. Toss through the sauce, loosening with a little reserved water, if needed.
    12. Finely grate in most of the Parmesan and toss together, then serve with the rest of the Parmesan grated over the top.
