Chorizo and vegetable pasta bake recipe - BBC Food image

With loads of flavour, this cheesy pasta bake will leave you totally satisfied. By cutting the chorizo into small chunks, you should get a little piece in most mouthfuls so you don’t notice you are eating less meat. This also works for other dishes such as stews, casseroles, curries and pies.

4 tbsp olive oil
110g/3¾oz chorizo, skin removed, cut into small cubes
2 red onions, thinly sliced
200g/7oz closed-cup mushrooms, quartered
4 garlic cloves, thinly sliced
1 tsp chilli flakes (use less if you don’t want it too spicy)
2 tsp smoked paprika
2 tsp dried oregano
2 x 400g tins chopped tomatoes
200g/7oz pasta shapes, such as conchiglie or penne
160g/5¾oz broccoli, cut into florets
150g/5½oz cheddar, grated
salt and freshly ground black pepper

Steps:

  • Preheat the oven to 200C/180C Fan/Gas 6.
  • Heat the oil in a large saucepan over a medium heat. Add the chorizo, red onions, mushrooms, garlic, chilli flakes, paprika and oregano and fry for 15 minutes, or until the onions have softened, stirring often.
  • Add the tomatoes, then fill each tin a quarter full of cold water. Swill around to gather any remaining tomato, tip into the pan and season with salt and pepper. Bring to a simmer and cook for 5 minutes.
  • Meanwhile, bring a large saucepan of salted water to the boil, add the pasta and cook according to the packet instructions. Add the broccoli 4 minutes before the end of the cooking time. Drain the pasta and broccoli, then tip into the cooked tomato sauce and stir.
  • Pour into a large baking dish, top with the cheese and bake for 15 minutes, or until golden brown and bubbling.

Prawn and chorizo are two of the best ingredients around, pair them with pasta and you're on to a winner.

3 raw tiger prawns
100g/3½oz linguine
1 tbsp olive oil, plus extra for drizzling
1 garlic clove
1 x 2.5cm/1in piece chorizo, cut into small cubes
1 tomato, chopped
½ tbsp red wine vinegar
½ lime, juice only
salt and freshly ground black pepper

Steps:

  • Cook the pasta according to packet instructions, or until the pasta is al dente. Drain the pasta and set aside.
  • Meanwhile, heat the olive oil in a frying pan and fry the garlic for 1 minute, or until softened. Add the chorizo and prawns and fry for 2-3 minutes, or until golden-brown all over. Stir in the chopped tomato and red wine vinegar and cook for 2-3 minutes, or until the mixture has thickened and the prawns are cooked through (they should be pink and opaque).
  • Remove the pan from the heat and add the pasta, mixing well to coat in the sauce. Add a squeeze of lime juice and season, to taste, with salt and pepper. Put the pasta on a plate, drizzle over some olive oil and serve.

    1. Peel and finely slice the garlic, peel and roughly chop the onion and carrot. Finely chop the parsley stalks, then roughly chop the chorizo and chicken thighs.
    2. Put a lug of oil into a large lidded shallow casserole or paella pan on a medium heat, add the garlic, onion, carrot, parsley stalks, chorizo, chicken and paprika, and fry for around 5 minutes, stirring regularly.
    3. Deseed and chop the pepper, then add to the pan for a further 5 minutes.
    4. Stir through the tomato purée and crumble in the stock cube, then add the rice and stir for a couple of minutes so it starts to suck up all that lovely flavour.
    5. Pour in 750ml of boiling water and add a pinch of sea salt and black pepper. Pop the lid on and bring to the boil, then reduce to a simmer for 15 minutes, stirring regularly from the outside in and from the inside out, and adding a splash of water if needed.
    6. Stir in the peas and prawns, replace the lid, and cook for a further 5 minutes, or until hot through.
    7. Season to perfection, then chop the parsley leaves, scatter them over the paella, and serve with lemon wedges on the side for squeezing over.
