Our Deep Covered Baker allows you to prepare a pork tenderloin in the microwave, which gives you a head start on speedy sandwiches or salad.

1 pork tenderloin (about 1 pound)
1 tablespoon vegetable oil
2 tablespoons Smoky Barbecue Rub
Ingredients for Miniature Barbecue Pork Sandwiches or Barbecue Pork Salad

Steps:

  • On Large Grooved Cutting Board, trim fat and silver skin from pork tenderloin using Boning Knife. Brush with oil using Chef's Silicone Basting Brush. Place pork into Deep Covered Baker, tucking narrower end under to create a uniform thickness. Evenly rub pork with barbecue rub.Cover baker; microwave on HIGH 6-10 minutes or until Digital Pocket Thermometer registers 150°F, checking temperature at 6 minutes and then at every 2-minute interval. Remove baker from microwave; let stand, covered, 10 minutes (temperature will rise to 160°F for medium doneness). Prepare sandwiches or salad, if desired.

1/4 cup (50 mL) all-purpose flour
2 tbsp (30 mL) yellow cornmeal
1/2 tsp (2 mL) salt
1/4 tsp (1 mL) coarsely ground black pepper
1 pork tenderloin (about 1 lb/450 g)
1/4 cup (50 mL) butter or margarine, divided
1/2 cup (125 mL) chicken broth
2 tbsp (30 mL) fresh lemon juice
2 tsp (10 mL) lemon zest
1 garlic clove, pressed
1 tbsp (15 mL) snipped fresh parsley (optional)
2 tbsp (30 mL) capers, drained and rinsed (optional)

Steps:

  • Combine flour, cornmeal, salt and black pepper in shallow dish. Slice pork into eight 2-in./5-cm-thick slices. Place one slice into a resealable plastic food storage bag. Using flat side of Meat Tenderizer, flatten pork to a 1/4-in. (6-mm) thickness. Coat both sides with flour mixture, shaking off excess. Repeat with remaining pork slices; discard any remaining flour mixture.Place 3 tbsp (45 mL) of the butter in (10-in./24-cm) Skillet; heat over medium-high heat, swirling until melted. Add half of the pork slices to Skillet; cook 3 minutes on each side or until pork is golden brown and centers are no longer pink. Remove from skillet to platter; keep warm. Repeat with remaining pork.Add broth, lemon juice, zest and garlic to Skillet. Heat over medium heat 1-2 minutes. Add remaining butter to Skillet; swirl until melted. If desired, sprinkle parsley and capers over pork. Carefully pour sauce over pork slices; serve immediately.

  • Preheat the oven to 450°F (230°C). Place the tenderloins side by side, but not touching, on the Large Bar Pan. Rub the surface of the pork with garlic pressed with the Garlic Press. In a small bowl, combine the seasoning mix and salt. Rub the mixture over the entire surface of the pork. Use the Forged Chef’s Knife to cut the potatoes in half or in quarters, depending on their size, and to cut the bell pepper into 1" pieces. Then slice the onion into ¼"-thick wedges. In a large Bamboo Fiber Mixing Bowl, combine the oil, pressed garlic, seasoning mix, salt, and black pepper; mix well. Add the vegetables and toss to coat. Place the vegetables on the bar pan, surrounding the pork. Bake for 25-30 minutes, or until the Pocket Thermometer registers 155°F (68°C) for medium doneness; 165°F (74°C) for well done (see Cook’s Tips). Remove the pan from the oven and let it stand for 5 minutes.Carve the pork into thin slices. Arrange the tenderloin slices and vegetables on a serving platter.

  • For salad, seed tomatoes with Core & More; dice with Color Coated Tomato Knife. Dice onion with Santoku Knife. Remove kernels from corn (see Cook's Tip). Combine tomatoes, onion, corn and orange segments in Classic Batter Bowl; set aside. Wash lettuce; drain and set aside.For citrus sauce, zest one orange with Microplane® Adjustable Fine Grater to measure 1 teaspoon zest. Juice both oranges with Juicer to measure 1/2 cup juice. Chop serrano pepper using Food Chopper. Juice lime into Small Batter Bowl using Citrus Press. Add orange zest, juice, serrano pepper, oil, brown sugar, garlic pressed with Garlic Press and citrus rub; whisk using Stainless Whisk and set aside.For pork, trim silver skin and cut tenderloin into 12 equal medallions using Chef's Knife. Slightly flatten each medallion with flat side of Meat Tenderizer; rub pork with citrus rub. In (12-in.) Cook citrus sauce in same Skillet over medium heat 2-3 minutes or until sauce is slightly thickened, stirring to loosen browned bits from bottom of Skillet using Silicone Flat Whisk. Remove from heat and pour 1/4 cup of the sauce over tomato mixture; toss to coat.To serve, place lettuce in center of each serving plate; top with tomato mixture and three pork medallions. Drizzle with remaining sauce.
