This easy rosemary and parmesan bread recipe will make you more confident about bread baking. Baking bread in a Dutch Oven provides a crispy exterior to any bread!

Yield 10 servings

Number Of Ingredients 9

4 cups (1 L) all-purpose flour (18 oz./540 g)
1 pkg (¼ oz./7 g) instant yeast (2¼ tsp/11 mL)
2 tsp (10 mL) salt
½ tsp (2 mL) sugar
1¼ tsp (6 mL) rosemary, finely chopped, divided
2¼ oz. (70 g) parmesan cheese, coarsely grated (½ cup + 1 tbsp/140 mL), divided
1½ cups (375 mL) water, warm
Olive oil for brushing
Parchment paper

Steps:

  • Combine the flour, yeast, salt, sugar, 1 tsp (5 mL) of rosemary, and ½ cup (125 mL) of Parmesan in a large bowl. Add warm water (120–130°F/49–54°C; check with the Instant-Read Food Thermometer). Stir until thoroughly combined.Place mixture on a floured surface; knead until it forms a smooth ball, about 5–6 minutes. Place in a medium bowl and brush with olive oil. Cover and set in a warm area until it’s doubled, about 1–2 hours.Place the dough on a floured surface and fold under itself several times; shape into a ball, pinching the seams underneath. Place on a piece of parchment paper and put back in the bowl. Brush the top with oil and cover. Let rise until doubled, about 1–2 hours.Place the 6-qt. (5.7-L) Enameled Cast Iron Dutch Oven in the oven and preheat at 450°F (230°C) for 30 minutes. Brush the dough with olive oil and top with remaining Parmesan and rosemary. Score a large 'X' on top with a knife or kitchen shears. Carefully transfer dough with parchment into the preheated Dutch oven.Bake, covered, for 25 minutes. Carefully remove the lid and bake until golden brown, about 8-10 minutes. Let cool on a cooling rack for 15–30 minutes before serving.

Yield 7 servings of 1½ cups (375 mL)

Number Of Ingredients 13

½ tbsp (7 mL) canola oil
1 medium onion, chopped
1½ lbs. (700 g) 90% lean ground beef
3 garlic cloves, pressed
3 tbsp (45 mL) chili powder
1½ tbsp (22 mL) unsweetened cocoa powder
2½ tsp (12 mL) cumin
¾ tsp (4 mL) Seasoning Salt
½ can (3 oz./90 g) tomato paste
1½ cups (375 mL) low-sodium beef broth
1½ cans (16 oz. or 398 mL each) fire roasted tomatoes, undrained (about 2½ cups/625 mL total)
1½ cans (16 oz. or 398 mL each) mild chili beans in sauce, undrained (about 2½ cups/625 mL total)
Optional: Sliced green onion, sour cream, shredded cheddar cheese, jalapeño slices

Steps:

  • Heat the oil in the Rockrok® Dutch Oven over medium heat until shimmering, about 3–5 minutes.Add the onion to the Dutch Oven. Cook and stir, uncovered, until the onions are slightly softened, about 2–3 minutes.Add the ground beef and garlic. Cook over high heat for 8–10 minutes, breaking the beef into crumbles. When the beef is no longer pink, drain (if necessary). Stir in the remaining ingredients. Cover and bring to a boil over high heat. Reduce the heat to low and simmer for 15 minutes, stirring occasionally. Serve topped with sour cream, green onion, sour cream, shredded cheddar cheese, or jalapeño slices, if you like.

PAMPERED CHEF STYLE APPLE CRISP (FOR MICROWAVE OR OVEN ...
This is one of the recipes that was served at the very first Pampered Chef party I attended, back in 1994. It is a very easy recipe (the hardest part is prepping the apple slices) and can be made in either microwave or the oven. I have made it both ways and prefer the oven version, but it is awfully nice that this can also be tossed into the microwave for a last minute dessert on busy nights. The demonstrator had a handy tip for the apples: After she ran them through the apple peeler/slicer gizmo they sell, she dropped them into a bowl filled with a can of lemon-lime soda (like Sprite) - and then drained them and patted them dry before using in this recipe. This way the apples didn't turn all sludgy brown before she was ready to demonstrate the recipe itself. I am allowing a large amount of prep time for those of you who don't own one of the PC apple gizmos - once your apples are ready, it only takes about 5 minutes to prepare the crisp for baking.
