Pennsylvania Dutch Milk Pie – A Coalcracker in the Kitchen image

Makes a three inch individual tart sized right for snacking. Made by cooks for children using left-over pie dough scraps from "the good pies" they were baking.

Scraps of crust from your favorite crust recipe
2 Tablespoons flour
2 Tablespoons sugar
1/4 cup whole milk
2 to 3 thin slices butter
Cinnamon

Steps:

  • Mix together flour and sugar with fingers or whisk in small bowl to remove lumps. Sprinkle into crust. Drizzle with milk. Stir with finger to mix. Top with butter. Sprinkle with cinnamon.
  • Bake at 350F degrees for 20 to 25 minutes. Center should be "jiggly"

This is a very old Pennsylvania Dutch treat, a sort of milk and sugar pie made usually for children, as a way to use up leftover pie dough. This makes an odd-looking pie, but it tastes better than it looks. I have heard this called many names, among them Slap Jack, Flippy, Shlop Boi, Flitche, Flabby, or even Stingy Pie!

Yield 1 - 9 inch pie

Number Of Ingredients 7

1 (9 inch) unbaked pie shell
2?½ tablespoons all-purpose flour
¾ cup white sugar
1 cup whole milk
1 cup dark molasses
2 tablespoons butter
¼ teaspoon ground cinnamon, or to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Combine the flour and sugar in the pie shell, and mix together using your fingers. Pour in milk, and again, mix with your fingers to avoid damaging the crust. Dribble in the molasses, and dot with butter. Sprinkle cinnamon over the top.
  • Bake for 10 to 15 minutes in the preheated oven, then turn the oven down to 350 degrees F (175 degrees C), and bake for an additional 15 minutes, or until the filling is set, and the top is browned.

  • Hi....this sounds like a German lowfat milk pie to me. They make them around here in Pa. Dutch country, but my mother (who grew up in Wheeling, WV) had a (German) grandma who made them for her, too. Here is a recipe, see if this is it:Heat oven 400. Place ingredients in the above order into unbaked pie shell (I mix flour & sugar together first, then put in shell). Stir a bit with a fork to mix ingredients (be careful of raw pie dough on the bottom). Bake for 15 minutes., then turn down oven to 350 for 30 min. Will set & get firmer as it cools.
