1 box Barilla® Collezione Orecchiette
1 teaspoon baking soda
Salt to taste
3 bunches broccoli rabe
1 pound Italian sausage
4 tablespoons extra virgin olive oil divided
2 garlic cloves sliced
red pepper flakes to taste
½ cup Romano cheese grated

Steps:

  • Bring two 1-gallon pots of water to a boil.
  • In the first pot, add a bit of salt and baking soda.
  • Cook broccoli rabe tops for 10 minutes, discarding the thick stems.
  • Drain, set aside and when cooled down chop roughly.
  • Meanwhile in a skillet sauté crumbled sausage with 2 tablespoons olive oil until brown, then add garlic and red pepper cook one minute.
  • Stir in cooked broccoli rabe.
  • In the second pot, cook pasta two minutes less than package directions and drain, reserving some of the cooking water.
  • Toss pasta and sauce in a skillet with some cooking water until the sauce is coating the pasta and pasta is perfectly cooked.
  • Stir in cheese and remaining olive oil before serving.

1 tablespoon olive oil
2 cloves garlic, finely chopped
8 ounces hot or sweet Italian sausage, removed from casings
1 15-oz. can diced tomatoes, with juice
Salt
1 pound orecchiette or pasta shells
4 cups small broccoli florets (from one head)
Shredded Parmesan, optional

Steps:

  • Warm oil in a medium skillet over medium-high heat. Add garlic and sauté until fragrant, about 30 seconds. Add sausage and cook, breaking up with a wooden spoon, until it loses its pink color, about 6 minutes. Add tomatoes with their juice and 1/4 tsp. salt and cook, stirring occasionally, until most of juice has evaporated and sauce has thickened, about 10 minutes.
  • While sauce is cooking, bring a large pot of salted water to boil. Stir in pasta and cook according to package label directions. In last 2 minutes of cooking time, stir in broccoli and continue to cook until pasta is al dente and broccoli is tender. Drain, return to pot and toss with sauce. Serve immediately, with shredded Parmesan on the side, if desired.
