My mother used to make a cake similar to this.

1-1/2 cup(s) sugar
2 cup(s) all purpose flour
1 teaspoon(s) soda
1 teaspoon(s) salt
1 teaspoon(s) nutmeg
1 teaspoon(s) cinnamon
1 cup(s) vegetable oil
3 - eggs, beaten
1 cup(s) buttermilk
1 tablespoon(s) vanilla extract
1 cup(s) fig preserves, mashed
1/2 cup(s) chopped pecans
BUTTERMILK GLAZE
1/4 cup(s) buttermilk
1/2 cup(s) sugar
1/4 teaspoon(s) soda
1-1/2 teaspoon(s) cornstarch
1/4 cup(s) butter
1-1/2 teaspoon(s) vanilla extract

Steps:

  • Combine dry ingredients, add oil and eggs, beat well; add buttermilk and vanilla, mixing thoroughly. Stir in preserves and pecans. Pour into greased and floured bundt pan and bake at 350 degrees for approximately 1 hour or until done. Cool in pan 10 minutes then remove. Pour warm buttermilk glaze over warm cake.
  • Buttermilk glaze: Combine first 5 ingredients in a saucepan; bring to a boil, and remove from heat, add vanilla.

Number Of Ingredients 21

1 1/2 cups sugar
2 cups all-purpose flour
1 tsp soda
1 tsp salt
1 tsp nutmeg
1 tsp cinnamon
1/2 tsp allspice
1/2 tsp cloves
1 cup canola or vegetable oil
3 eggs
1 cup buttermilk
1 tbsp vanilla extract
1 cup chopped pecans
1 cup chopped fig preserves
Buttermilk Glaze:
1/4 cup buttermilk
1/2 cup sugar
1 1/2 tsp corn starch
1/4 cup margarine
1 1/2 tsp vanilla extract
1/4 tsp baking soda

Steps:

  • Fig Cake: In a large glass bowl combine the sugar, flour, soda, salt, nutmeg, cinnamon, allspice and cloves. Add the oil and mix well. Add the eggs. Mix. Add the buttermilk and vanilla, mixing completely. Stir in the figs and pecans.
  • Pour the batter into a greased floured 10-inch tube pan.
  • Bake in a preheated 350 degrees oven for 1 hour and 15 minutes. Let cool 10 minutes and remove from pan. While it’s baking, prepare the glaze.
  • Buttermilk Glaze: Combine the buttermilk, 1/2 cup sugar, baking soda, cornstarch and margarine in a medium saucepan. Bring to a boil and remove from heat.
  • Cool slightly and add in the vanilla. While mixture is warm, pour over the slightly cooled cake.
