Some rye or bourbon, sugar, Angostura bitters and a twist: The old-fashioned cocktail is a dependable formula. Here, tequila and mescal take whiskey's place in a south-of-the-border spin on the traditional recipe. Invented in 2007 at Death & Co. in the East Village, by the tequila specialist Philip Ward, this drink quickly started appearing on menus across the country.

Number Of Ingredients 5

1 1/2 ounces reposado tequila
1/2 ounce mezcal
1 teaspoon agave nectar
1 dash Angostura bitters
Strip of orange peel with pith, one inch wide

Steps:

  • Combine liquids in a cocktail shaker with a generous handful of ice. Stir until well chilled. Strain into a rocks glass filled with ice.
  • Hold a lighted match over drink in one hand and orange peel in other hand, with orange side facing flame and about an inch away. Carefully and quickly squeeze orange peel until oils spark. Put out match and drop peel into cocktail.

Try this tequila cocktail with mezcal and agave nectar, a riff on the classic Old Fashioned cocktail recipe from Phil Ward.

Yield makes 1 cocktail

Number Of Ingredients 5

1 ½ oz. reposado tequila (El Tesoro preferred)
½ oz. mezcal (Del Maguey San Luis del Rio preferred)
1 bar spoon agave nectar
2 dashes Angostura bitters
Flamed orange twist, for garnish

Steps:

  • Mix the tequila, mezcal, agave nectar, and bitters in a mixing glass with ice. Strain over a fresh rock in an Old Fashioned glass. Flame an orange peel over the top of the drink, and rest the twist in the glass as a garnish.

Like many cocktails, Philip's original recipe (of 45 ml Reposado tequila, 15 ml Mezcal, 7.5 ml Agave syrup and 1 dash Angostura bitters) has morphed with chocolate bitters now favoured by many in place of Angostura (as per the recipe above). If using a "sweeter" style glycerine-based (rather than alcohol-based) chocolate bitters, such as Fee Brothers, or you have a bone-dry palate, then consider reducing the agave syrup to 5ml.
