These date bars make a tasty post-workout snack. And since they’re made with all-natural ingredients, you'll feel great about eating them!

Number Of Ingredients 6

1 lb. (450 g) pitted dates
3 cups (750 mL) water
⅓ cup (75 mL) raw almonds
⅓ cup (75 mL) raw cashews
⅓ cup (75 mL) coconut or almond flour
2 pkts. Enrichables™ Pea Protein

Steps:

  • Combine the dates and water in the Large Micro-Cooker® and microwave, covered, on HIGH for 4–6 minutes. Remove from the microwave and drain well. Uncover and let the dates cool for 10 minutes.Chop the almonds and cashews with the Food Chopper.Place the cooked dates in the Manual Food Processor or Deluxe Cooking Blender. Process or pulse until a paste is formed.Combine the dates, almonds, cashews, coconut flour, and Pea Protein in a large mixing bowl and stir to combine.Use a scant Large Scoop to press mixture into the wells of the Snack Bar Maker. Cover and chill in the freezer for 1 hour, or in the refrigerator for at least 2 hours.

2 tablespoons butter
1?½ cups dates, pitted and chopped
1 cup confectioners' sugar
2 eggs, beaten
¼ teaspoon salt
2?½ cups crisp rice cereal
½ cup chopped walnuts
1 teaspoon vanilla extract
2 cups flaked coconut

Steps:

  • Using a double boiler, heat butter, chopped dates, confectioner's sugar, eggs and salt. Stir constantly until very thick, about 20 minutes. Remove from heat and cool.
  • Add crispy rice cereal, chopped walnuts, and vanilla. Mix well and form into small balls. Roll in coconut. Keep refrigerated.
