1 cup buttermilk
¼ cup water
2 tablespoons dark-colored corn syrup
1?½ cups bread flour
¾ cup whole wheat flour
¾ cup rye flour
¾ teaspoon salt
½ teaspoon caraway seed
¼ teaspoon aniseed (optional)
1 teaspoon active dry yeast or bread machine yeast
Milk or buttermilk

Steps:

  • Add the ingredients except the last milk or buttermilk to a 1-1/2- or 2-pound bread machine according to the manufacturer's directions. Select the dough cycle. When the cycle is complete, remove dough from machine. Punch dough down. Cover; let rest for 10 minutes.
  • Grease 2 large baking sheets or 12-inch pizza pans. Divide dough into fourths. Cover and refrigerate 2 portions of the dough. On a lightly floured surface, roll each of the remaining portions into a 12-inch circle. Transfer to prepared baking sheets or pizza pans.
  • Using a fork, prick the entire surface of each round several times. Brush rounds with milk or buttermilk. Bake in a 400 degree F oven for 11 to 13 minutes or until crisp and browned, rotating baking sheets halfway through baking. Cool on wire racks. Repeat with remaining portions of dough. Serve warm or cool. Store in an airtight container up to 3 days to maintain crispness.

Chapati or Roti is an unleavened flatbread that is made daily in most Indian households. Easy to make, it's the perfect accompaniment to almost every meal.

Number Of Ingredients 6

200 g Multigrain flour (Any mix will do.)
200 g All purpose flour (Maida aka Refined flour.)
1 teaspoon salt
2 tbsp Oil
200 ml Water (More or less as needed)
2 tbsp All purpose flour (For rolling or dusting)

Steps:

  • In a large bowl, mix the flour and salt.
  • Add the oil and knead into a dough.
  • Add water a little at a time to the dough, and lnead into a large ball. Only use as much water as the dough needs. (This depends on the flour you use and also on the weather conditions.)
  • Cover with a cloth and set the dough aside for 10 mins.
  • After 10 minutes, make small balls and roll the dough out into thin circles about 5 to 6 inch in diameter.
  • Place the chapatis on a hot tava with a little butter and cook till it blisters.
  • Flip sides for 30 secs each, and continue doing this till cooked.
  • Cover with a dollop of butter and serve the chapatis hot with your meals.
