For seven centuries, Moors and Christians fought one another in Spain, but in the guise of black beans and rice they surrendered to each other's charms within the all-embracing New World pot. Like the hybrid culture that flourished in medieval Spain, the rice dish known as _moros y cristianos_ is an exemplar of exchange between civilizations. It is feast food in Cuba, where you'll find it in the western provinces. Considering that there is a Veracruzan version of this dish and that Cuba always imported black beans from Mexico, we are left in doubt as to which version came first. Regardless of its place of birth, it is one of the most felicitous rice and bean combinations I have ever tasted. The flavors of all the other ingredients are absorbed seamlessly by the rice, the vinegar providing point and counterpoint to the mealy beans, the aroma of cumin and oregano a subtle backdrop for the meaty smoked bacon, which in turn joins forces with the olive oil to add aroma and sheen to the rice. And then the color, a dark brown or hybrid of white and black.

Number Of Ingredients 16

8 ounces dried black beans
1 medium yellow onion (about 8 ounces), peeled
1 medium green bell pepper (about 7 ounces), cored, seeded, and halved
6 Caribbean sweet peppers (ajíes dulces) or 1 cubanelle pepper
1 ham hock (optional)
2 cups (about 13 ounces) long-grain rice or Uncle Ben's converted rice
2 tablespoons extra-virgin olive oil
4 ounces slab bacon, diced
1 medium yellow onion, finely chopped (about 1 1/4 cups)
1 medium green bell pepper (about 7 ounces), cored, seeded, deveined, and finely chopped (about 1 cup)
1 teaspoon ground cumin
1 teaspoon dried oregano
1 bay leaf
1 tablespoon distilled white vinegar, or to taste
1 tablespoon dry sherry, or to taste
2 teaspoons salt, or to taste

Steps:

  • Rinse and pick over the beans. Place in a medium heavy-bottomed pot with 2 1/2 quarts water, the onion, bell pepper, ajíes or cubanelle pepper, and the ham hock, if using, and bring to a boil over high heat. Lower the heat to medium and simmer, uncovered, until the beans are tender but still retain their shape, about 2 hours. Drain, reserving 4 cups of the cooking liquid. Discard the vegetables and ham hock; you should have 2 cups cooked beans.
  • Place the rice in a medium bowl, cover with cold tap water, and swirl the rice, then drain, holding the rice in place with one hand. Repeat the process as many times as necessary until the water runs clear. Drain well in a sieve or strainer. Heat the oil in the heavy-bottomed pot over medium heat. Add the diced bacon and sauté until golden, about 3 minutes. Add the onion, green pepper, cumin, oregano, and bay leaf and sauté until the onion is soft, about 5 minutes.
  • Add the rice and stir to coat thoroughly. Add the beans and the reserved bean cooking liquid, then add the vinegar, sherry, and salt. Mix well and taste for seasoning; add a dash more of sherry, vinegar, and/or spices if needed. The cooking liquid should be flavorful. Cook, uncovered, until most of the liquid is absorbed and small craters have formed on the surface of the rice. Fluff the rice slightly with a kitchen fork, reduce the heat to the lowest possible setting, and cook, tightly covered, for 20 minutes.
  • Remove from the heat and let stand, uncovered, for at least 10 minutes before serving.

Congrí (moros y cristianos as they’re also known) is a very popular dish in Cuba made up of rice with black or red beans. Its preparation has its tricky parts, but the trick to getting the rice to be nice and dark is simple. I was lucky enough to learn this from one of my Cuban friends and since then I have followed her instructions to the letter, while still adding my own personal touch.

1 pound black beans, softened or canned
3 cups of grain parboiled rice (Parboiled rice)
1 cup olive oil, divided
2 bay leaves
4 cloves garlic, finely chopped
1/2 teaspoon ground cumin
2 cups chopped onion julienne
1 cup yellow pepper
1 cup red pepper
1 cup orange pepper
Salt to taste

Steps:

  • If you choose to use canned beans, skip this step and go on to the next one. Soften the dried beans, wash and cook over medium heat in a large pot in 1 1/2 liter of water with 1 teaspoon salt, garlic, cumin and bay leaf. Simmer until they are soft (about 1 hour), check on the water occasionally.
  • Add 1/2 cup of olive oil to a pot and fry the rice for a few minutes, then add the beans, make sure to use only 5-6 cups of water in which the beans were cooked. Cook over medium heat – keep covered until the rice has absorbed the liquid, about 20 minutes.
  • Heat oil in a large skillet and add onions, peppers and cook for about 2 minutes just to minimize them a bit. Once ready, pour it over the cooked rice and mix well. Garnish with 1 red pepper cut into strips and pour the liquid over the rice.

    1. Preheat your oven to 190ºC/375ºF/gas 5. Bring two large pans of salted water to the boil.
    2. Scrub the beets, then place in one of the pans - keep them separate to stop the rest of your veg turning red! Parboil for 20 to 25 minutes.
    3. Meanwhile, peel the carrots and parsnips, then chop any bigger ones in half along with the turnips. Trim and quarter the fennel.
    4. Place the prepped veg together in the second pan and parboil for 10 minutes. Drain all the veg and leave to steam dry, then separate them out so you can hit them with those different flavours.
    5. Toss the beets with the balsamic vinegar and whole herb sprigs.
    6. Toss the carrots with the clementine juice and throw in the squeezed halves, then pick over the rosemary leaves.
    7. Toss the parsnips with the vinegar and tear over the sage leaves. Reserve the honey for later.
    8. Toss the turnips with the vinegar and bay.
    9. Toss the fennel with the lemon juice, then pick over the thyme leaves.
    10. Lay them out on a large tray, keeping each veg type together. If you're making this ahead, you can get up to this stage the day before, then cover them with tin foil and keep them with your spuds till your turkey is resting. Nothing will discolour because of the oil and acid.
    11. Roast for 50 minutes to 1 hour, or until golden, crispy and beautiful. About 5 minutes before the veg are ready, drizzle the honey over the parsnips.
    12. Once ready, give the tray a jiggle, then pile the veg on a platter.
