I was wondering what to do with the "left over" coffee yogurt from the Double Coffee Chocolate Cake recipe I posted a couple of days ago so I went to work in my kitchen! I only prepared a half recipe of the Double Coffee Chocolate Cake, hence the reason I had left over yogurt.

Number Of Ingredients 15

1/2 cup(s) butter, softened
1/2 cup(s) sugar in the raw (or white sugar)
1 teaspoon(s) coffee extract (or vanilla extract)
1 - egg
3/4 teaspoon(s) mace (or nutmeg or pumpkin pie spice or combo of all three)
1 teaspoon(s) cinnamon
3/8 teaspoon(s) baking powder
3/8 teaspoon(s) baking soda
1 1/8 cup(s) all purpose flour
1/2 cup(s) sour cream
1/8 cup(s) coffee yogurt (dannon brand)
TOPPING
1/4 cup(s) brown sugar
1/4 cup(s) sugar in the raw
1 tablespoon(s) cinnamon

Steps:

  • Preheat oven to 350. Prepare mini loaf pans.
  • In a medium size mixing bowl cream butter and sugar (3-5 min.) Add extract and egg; mix well.
  • In a small bowl combine spice(s), cinnamon, baking powder, baking soda and flour. Set aside. In another bowl combine sour cream and coffee yogurt. Set aside. Prepare topping mixture-set aside.
  • Alternate adding flour mixture and yogurt mixture to the creamed butter, beginning and ending with the flour mixture. Beat well after each addition.
  • Sprinkle 1 teaspoon of the topping mixture in each mini loaf pan. Add 1 tablespoon batter to each loaf pan, sprinkle with 1 teaspoon topping. Divide remaining batter between loaves and top with remaining topping mixture.
  • Bake at 350 for 23-25 min. Allow to cool 2-3 min before removing from pans. Serve hot.

Number Of Ingredients 10

2 cups all-purpose flour
1-1/4 cups sugar, divided
3 teaspoons baking powder
3-1/2 teaspoons ground cinnamon, divided
1-1/4 teaspoons salt
2 eggs
1 cup buttermilk
1/3 cup vegetable oil
2 teaspoons vanilla extract
3 tablespoons butter, melted

Steps:

  • In a large bowl, combine the flour, 1 cup sugar, baking powder, 1-1/2 teaspoons cinnamon and salt. In another large bowl, combine the eggs, buttermilk, oil and vanilla; stir into dry ingredients just until moistened. , Pour half of the batter into a greased 9x5-in. loaf pan. In a small bowl, combine the remaining sugar and cinnamon; stir in butter. Sprinkle with half the cinnamon-sugar mixture; cut through batter with a knife to swirl the topping. Repeat. , Bake at 350° for 55-60 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.
