How to make Chicken Methi.

Chicken,Fresh fenugreek leaves (methi),Ginger,Green chilli,Fresh coriander leaves,Oil,Bay leaves,Green cardamom,Black cardamom,Cloves,Cinnamon,Black peppercorns,Garlic paste,Turmeric powder,Red chilli powder,Coriander powder,Yogurt,Dry fenugreek leaves (kasuri methi),Garam masala powder,Salt,

Steps:

  • Clean, skin, wash and cut chicken into medium sized pieces. Peel, wash and chop onions. Peel, wash and chop ginger. Remove stems, wash and chop green chillies. Wash and chop coriander leaves.
  • Heat oil in a pan. Add bay leaves, green cardamoms, black cardamoms, cloves, cinnamon and peppercorns. Sauté until cardamoms start to crackle.
  • Add onions and cook until translucent and soft. Make sure to stir continuously. Add ginger, garlic paste, turmeric powder, red chilli powder, coriander powder and chopped green chillies. Sauté for a minute.
  • Add chicken pieces and beaten yogurt and cook on high heat for seven to eight minutes. Add kasoori methi and three-fourth cup of water.
  • Cover the pan and cook on low heat for ten minutes. Add garam masala powder, salt and mix properly. Serve hot garnished with chopped fresh coriander leaves.

Methi Chicken Curry or Murg Methi is a tasty curry made by cooking bone-in chicken with fresh methi (fenugreek) leaves. This dish is quite easy to prepare and is a twist to the normal chicken curry. It offers all the health benefits of methi leaves in a delicious way.

Number Of Ingredients 17

Chicken - 1 lb (cut into bite size pieces)
Fenugreek Leaves (Methi) - 1 bunch (about 2 cups)
Onion - 2 (finely chopped)
Green Chillies - 2
Ginger Garlic Paste - 1 tbsp
Tomatoes - 2 (pureed)
Yogurt - 2 tbsp (beaten)
Turmeric Powder - 1/2 tsp
Red Chili Powder - 3 tsp
Coriander Powder - 2 tsp
Cumin Powder - 1/2 tsp
Fennel Powder - 1/2 tsp
Garam Masala Powder - 1/2 tsp
Cumin Seeds - 1/2 tsp
Fennel seeds - 1/2 tsp
Salt - as needed
Oil - 3 tbsp

Steps:

  • Take a heavy bottomed pan, heat the oil and splutter the cumin and fennel seeds.
  • Add the chopped onions and saute till it turns golden brown.
  • Add the ginger garlic paste and green chillies. Fry for a minute till the raw smell vanishes.
  • Add the chicken pieces, beaten yogurt and salt. Stir fry for few minutes.
  • Add all the dry spice powders (coriander, cumin, red chili, turmeric and fennel powders).
  • Add the tomato puree and required water. If you want a dry dish add very little water.
  • Cover and cook for about 15 minutes till the oil separates from the masala.
  • Finally add the methi leaves and garam masala powder.
  • Cook for a minute and switch off.
