EASY SUGAR FREE MERINGUE COOKIES (KETO, LOW CARB)



Easy Sugar Free Meringue Cookies (Keto, Low Carb) image

3 large egg whites (room temp)
pinch salt
1 tsp vanilla extract (*see paragraph above for flavor variations)
1/3 cup Better Than Sugar (or another sugar free sweetener)

Steps:

  • Preheat your oven to 225 degrees F. Place silpats or parchment onto 2 baking sheet pans.
  • Place egg whites into clean bowl or stand mixer. Start whipping on a low speed and as it begins to form continue to increase speed. Sprinkle in salt and continue to whip egg whites. Drizzle in vanilla extract. When you start to see soft peaks forming, add a small amount of the sugar free sweetener. Continue to add small amounts while whipping at a high speed. Continue to whip until the egg whites have started to pull away from the sides of the bowl. If you're unsure if they are stiff, you should be able to flip the bowl over and nothing moves or slips.
  • Place half of the whipped whites into the decorating tool or pastry bag with a star tip.
  • Make small swirls onto the baking sheet pan using the small circle shape on the silpat or on parchment measuring 1.25 inches. Continue with the remaining whipped whites. You should be able to make 44 cookies.
  • Bake for 2 hours. Then shut the oven off and leave them in the oven for another hour. Remove from the oven and allow to sit out on the counter to completely dry out. This can take a few more hours. We found ours crisp in the center of the meringue on the next day.

Steps:

  • The first step in learning how to make sugar-free meringue is to separate the egg whites from the yolks, to make sure your meringues will have the right consistency when following our recipe.
  • Next, beat the egg whites until frothy, add the sweetener and beat the mixture using an electric mixer for best results.
  • When your mixture for sugar-free meringues has been mixed well, put into a piping bag and find an oven-proof baking tray. The best way to achieve that typical meringue shape, is to squeeze out small amounts of the mixture onto the tray.
  • Finally, take the tray of sugar-free meringues and put into the oven to cook. Let it cook with the oven door slightly open for approximately 40 minutes at 100ºC. It is important to monitor the meringues while they are cooking to prevent them from burning.
  • When they are ready, take the tray out of the oven and leave the sugar-free meringue to cool at room temperature. If you wish to make your meringues a bit different and original, you can add in a little cinnamon powder for a delicious taste. Enjoy!
