Kids will love these handheld pasta delights! Buttered noodles meet baked pasta Alfredo in a slightly creamy, yet not overly saucy, kid-friendly dish. The pies are dense, yet tender, and the pasta still has a nice bite to it. It makes a great canvas that can accommodate any add-ins you or your kid may like. Just reheat them and pack them into a thermos in the morning.

Yield Serves 6 (serving size: 2 pies)

Number Of Ingredients 7

4 ounces mozzarella cheese, shredded (about 1 cup)
3 ounces Parmesan cheese, grated (about 3/4 cup)
3 large eggs, beaten
3 tablespoons melted butter
½ teaspoons kosher salt
8 ounces leftover cooked pasta
Optional fillings: chopped bacon, ham, or chicken

Steps:

  • Preheat oven to 375°F. Stir together cheeses, eggs, butter, and salt in a large bowl until combined. Stir in pasta and any other fillings, if desired, until combined.
  • Divide pasta mixture among 12 muffin cups, lightly coated with cooking spray. Bake in preheated oven until set and lightly golden around edges, about 15 minutes.

Number Of Ingredients 8

Nonstick cooking spray
4 ounces whole grain or multigrain thin spaghetti, broken in half
1 egg, lightly beaten
? cup grated Parmesan cheese
1 tablespoon milk
1 12 ounce package (12) refrigerated cooked Italian-style turkey or chicken meatballs
½ of a 23.8-ounce jar (1 1/4 cups) light no-sugar-added tomato and basil pasta sauce
½ cup shredded reduced-fat Italian cheese blend (2 ounces)

Steps:

  • Preheat oven to 350°F. Coat twelve 2 1/2-inch muffin cups with cooking spray. Cook pasta according to package directions; drain.
  • Meanwhile, in a large bowl combine the next three ingredients (through milk). Stir in cooked pasta. Using the back of a spoon, press mixture onto bottoms and slightly up sides of prepared muffin cups. Add meatballs and top with pasta sauce.
  • Bake 15 minutes. Sprinkle with cheese. Bake 2 minutes more or until meatballs are heated through and cheese is melted. Cool in muffin cups on a wire rack 5 minutes. Remove from muffin cups. If desired, serve with additional warmed pasta sauce.
