"Cake Boss" Buddy Valastro scores a touchdown with his meat game day pizza, loaded with Italian sausage, meatballs + pepperoni!

Number Of Ingredients 22

One 28-ounce can whole peeled tomatoes
drained with a little liquid remaining
2 tablespoons extra-virgin olive oil
2 large cloves garlic
minced
2 tablespoons (½ ounce) finely grated Parmigiano-Reggiano cheese
1 tablespoon sugar
Kosher salt
Semolina and flour mix
for dusting as needed
1 ball Pizza Dough
¼ to ½ cup pizza sauce or marinara sauce
1 ounce cooked Italian sausage
sliced ¼ inch thick or crumbled
5 cooked meatballs
sliced ¼ inch thick
5 slices pepperoni
5 to 7 slices spicy
pickled cherry peppers
¼ cup ricotta cheese
½ cup shredded mozzarella cheese
1 tablespoon grated Parmigiano-Reggiano cheese

Steps:

  • For the sauce, pass the tomatoes through a food mill set over a large bowl
  • Add the oil, garlic, Parmigiano-Reggiano and sugar, season with salt and let rest at room temperature for 1 hour to give the flavors a chance to develop
  • The sauce can be refrigerated in an airtight container for up to 2 days
  • Preheat oven to 400°F
  • For the pizza, dust a work surface with the flour mixture and press and stretch the dough on it until it's about 10 to 12 inches wide
  • Transfer it to a piece of parchment paper on a cookie sheet or a pizza stone, top with the sauce (use the amount you prefer) and bake for 5 to 7 minutes
  • Arrange the sausage, meatballs, pepperoni and peppers on the pizza, followed by dollops of the ricotta and the mozzarella and Parmigiano-Reggiano
  • Bake until the cheese is melted and the crust is browned, 5 to 7 minutes more

2 packages (6-1/2 ounces each) pizza crust mix
1 tablespoon olive oil
1-1/2 teaspoons garlic powder, divided
1/4 pound ground beef
1/2 teaspoon onion powder
2/3 cup spaghetti sauce
1 package (3-1/2 ounces) sliced pepperoni
6 ounces Canadian bacon, quartered
1/4 cup sliced fresh mushrooms
2 tablespoons sliced ripe olives
2 cups shredded part-skim mozzarella cheese

Steps:

  • Prepare pizza dough according to package directions. With floured hands, press dough onto a greased 14-in. pizza pan. Bake at 425° for 7-9 minutes or until lightly browned. Combine oil and 1 teaspoon garlic powder; brush over crust edges., In a large skillet over medium heat, cook beef with onion powder and remaining garlic powder until no longer pink; drain., Spread spaghetti sauce over crust to within 1 in. of edges. Top with beef mixture, pepperoni, Canadian bacon, mushrooms, olives and cheese. , Bake at 425° for 10-15 minutes or until cheese is melted and crust is golden brown.

The secret to perfect pan pizza is pressing the dough into a well-oiled pan (Pizza Hut uses soybean oil), then the pan is covered and the dough rises in a heated cabinet for 45 to 60 minutes. When the dough is topped, the edge is sprayed with a butter-flavored “food release” and the pie is baked at 500 degrees F until perfectly browned on top. You can use a 9-inch, 12-inch, or 15-inch deep dish pizza pan or cake pan for this recipe, and you’ll want to preheat your oven with a pizza stone in it to simulate the type of oven used at the chain. The hot ceramic surface of the pizza stone will cause the oil in the pan to cook the bottom of the dough so that it’s brown and crispy like an authentic pan pizza crust should be. I tried making the dough with cake flour, all-purpose flour, superfine “00” flour, bread flour and many combinations of these different flours which all contain varying amounts of gluten. I even tried rising the dough slowly in the refrigerator for various lengths of time as long as up to four days. But after a month of testing and about 30 pan pizzas later, I found the best dough to be straight bread flour, and to let the dough rise at room temperature.
