Ideally this can be done in a food processor, but a blender or immersion blender can work. Do not use a pestle and mortar as you may end up with an unsuitable consistency.   • Crack the egg and separate the white from the yolk. Reserve the yolk in the fridge. Although we only need the white for this part, we will need the yolk later.
  • Slowly add the egg white to the bowl with the sugar and ground almonds. Remember to beat the white lightly, without creating peaks as you would with a meringue. You should see that the mixture takes on the consistency of wet sand. Mix well for the total integration of the three ingredients.
