Crisp mini tuna patties in dollar buns get a flavor boost from melted American cheese.

1 cup dried breadcrumbs
2 (5-ounce) cans white albacore tuna in water, well-drained
1/4 cup shredded carrot
4 green onions, thinly sliced
2 large Land O Lakes® Eggs slightly beaten
1/4 teaspoon salt
1/2 teaspoon lemon & pepper seasoning
3 tablespoons Land O Lakes® Butter
4 (3/4-ounce) slices Land O Lakes® Deli American quartered diagonally
8 dollar buns, cut in half horizontally
3 tablespoons mayonnaise
8 small lettuce leaves

Steps:

  • Place 1/2 cup breadcrumbs into shallow bowl or pie pan; set aside.
  • Combine remaining 1/2 cup breadcrumbs, tuna, carrot, onions, eggs, lemon & pepper seasoning and salt in bowl; stir until well mixed.
  • Divide tuna mixture into 8 equal portions; flatten each to 3-inch patty. Place patties into breadcrumbs in bowl, coating both sides.
  • Melt butter in 12-inch nonstick skillet over medium heat until sizzling; add tuna patties. Cook, turning once, 5-6 minutes or until outsides are crisp and insides are heated through. Top each patty with 2 pieces cheese during last minute of cooking.
  • Spread cut-sides of top half of buns with mayonnaise. Place tuna patties onto bottom half of buns; top with lettuce leaves and top half of buns. Serve immediately.

Served on English muffins, we call these Tuna Sliders because they slide right down. I put "melt" in the title so others could find the recipe. I got this recipe from my mother. Serve with a green salad for a balanced meal. For a real treat, I recommend using #63244 English Muffins (Bread Machine Method) instead of store bought. If you are cooking for just 1 or 2 people, the tuna mixture will keep nicely in the refrigerator for a few days.

6 English muffins, split
1 (6 ounce) can tuna
1 cup shredded swiss cheese
1/2 cup Best Foods Mayonnaise
1 tablespoon lemon juice
1/4 teaspoon Worcestershire sauce
1/8 teaspoon Tabasco sauce

Steps:

  • Arrange the English muffin halves on a cookie sheet and pop them under a broiler to toast.
  • Meanwhile, drain and flake the tuna.
  • Add 3/4 cup of cheese and the remaining ingredients.
  • Mix thoroughly.
  • Remove the toasted English muffins from the broiler. Spread with tuna mixture.
  • Sprinkle remaining 1/4 cup of cheese over the tuna.
  • Return to the broiler until cheese melts and starts to bubble.
  • If you don't have Swiss cheese on hand, Monterrey Jack or Mozzarella make good substitutes.
