This clever cocktail packs all the classic flavours of spiced, fruity mincemeat into a perfect Christmas party cocktail

Steps:
- To make a mincemeat syrup, put 100ml water, the golden caster sugar and mincemeat in a pan and bring to the boil. Cool and strain though muslin into a sieve. Separately, mix the caster sugar and mixed spice, then dampen the rims of 4 martini glasses and dip in the sugar and spice mixture.
- Muddle the mincemeat in a cocktail shaker (you may need to make in 2 batches), then add the gin, sweet red vermouth, dark rum, 80ml mincemeat syrup and ice. Shake well and strain into your prepared glass.

- Preheat oven to 350° and line a baking sheet with parchment paper. Roll sugar cookie dough out to ¼” thick. Using a cookie cutter, cut out desired shapes then place cookies on prepared baking sheet. Bake until just set and lightly golden around the edges, 12 minutes. Let cool. Using an offset spatula, spread a thin layer of frosting onto rim of two martini glasses. Pour ¼ cup sprinkles onto a small plate then dip rims in sprinkles to coat. Use an offset to frost cookies with frosting then decorate with remaining 2 tablespoons sprinkles. In a cocktail shaker, combine milk, Baileys, vodka, and amaretto. Add ice and shake until cold. Pour into glasses and garnish rim with a cookie.

- In a pitcher, combine cream, vodka and liqueur. Refrigerate until serving., In a large bowl, beat cream cheese and confectioners' sugar until smooth. Gradually beat in cream until stiff peaks form. Fold in 3 tablespoons crushed candies; pour remaining candies onto a small plate. Refrigerate whipped cream mixture until serving., In a microwave-safe bowl, melt chips and shortening; stir until smooth. Spread onto a small plate. Spin rims of 12 cocktail glasses into melted chip mixture, then into crushed candies. Pour vodka mixture into prepared glasses; dollop with whipped cream mixture. If desired, garnish with additional candy canes.
