Make an easy loaf with this slow cooker bread recipe. This simple project is perfect for beginners and uses strong wholemeal or white flour

Number Of Ingredients 3

500g strong wholemeal flour or strong white flour (or a mix of flours, see tip), plus extra for dusting
7g sachet fast-action dried yeast
1g fine sea salt

Steps:

  • Mix the flour, yeast and salt in a large bowl and make a well in the middle. Measure 350ml warm water and pour most of it into the well. Mix the flour and water together with your fingers or a wooden spoon until combined into a slightly wet, pillowy, workable dough – add a splash more water if necessary.
  • Tip the dough onto a lightly floured surface and knead for at least 10 mins until smooth and elastic. This can also be done in a tabletop mixer with a dough hook.
  • Shape the dough into a large, tight ball and sit the ball on a square of baking parchment. Use the parchment to lift the dough into your slow cooker, cover and set the slow cooker to high. Leave for 2 hrs.
  • Lift the bread out using the parchment. The bottom should be crusty and the top should be springy, not soft. (If you have a digital cooking thermometer, the middle of the loaf should be 90C.) If it isn’t ready, return to the slow cooker for 15 mins and test again – it could take up to 2 hrs 30 mins.
  • The bread won’t get a significant crust or golden colour in the slow cooker. Once cooked, you can leave it to cool, or put in the oven at 240C/220C fan/gas 9 for 5-10 mins to get some colour.

5 medium ripe bananas
2-1/2 cups self-rising flour
1 can (14 ounces) sweetened condensed milk
1 teaspoon ground cinnamon
Cinnamon sugar, optional

Steps:

  • Place a piece of parchment in a 5-quart slow cooker, letting ends extend up sides. Grease paper with cooking spray. Combine the first 4 ingredients in a large bowl. Pour batter into prepared slow cooker. If desired, sprinkle cinnamon sugar over the top of batter. Cover slow cooker with a double layer of white paper towels; place lid securely over towels. , Cook, covered, on high until bread is lightly browned, 2-1/2 to 3 hours. To avoid scorching, rotate slow cooker insert a half turn midway through cooking, lifting carefully with oven mitts. Remove bread from slow cooker using parchment to lift; cool slightly before slicing.

Add flour, olive oil and salt and stir until combined and a shaggy dough begins to form. On a lightly floured surface, knead dough until it becomes smooth and soft, about 5 minutes. Roll dough into a ball, then place in slow cooker. Cook on high until golden on the bottom and cooked through, about 2 hours. (The internal temperature should be about 200° but bread won't be golden on top.) Carefully remove bread from slow cooker. To crisp up the crust, transfer bread to a baking sheet and broil until golden, 2 to 3 minutes. Let cool for at least 20 minutes. Slice and serve warm or at room temperature.
