Just found this recipe on the internet and have not made it yet, but it sure looks different and interesting. Bread is glazed with additional orange marmalade after baking.

Yield 1 loaf

Number Of Ingredients 9

2 cups flour
3 teaspoons baking powder
1 teaspoon salt
1/4 teaspoon baking soda
1 1/2 cups orange marmalade, divided
1 egg
3/4 cup orange juice
1/4 cup oil
1 cup pecans, chopped

Steps:

  • Preheat oven to 350°.
  • In a large bowl, combine flour, baking powder, salt and baking soda.
  • In a separate bowl, mix together 1 1/4 cups of marmalade, egg, oil and orange juice.
  • Add wet ingredients to flour mixture and mix well.
  • Stir in the nuts.
  • Pour into a greased loaf pan and bake at 350° for 50 to 60 minutes.
  • When done, cool briefly, then remove bread from the pan and place on a baking dish.
  • Glaze with the 1/4 cup of reserved marmalade and return to the oven for 1 minute.
  • Place on a rack and cool completely.
  • Bread will slice easier if chilled first.

1/2 cup butter, softened
1/2 cup packed brown sugar
2 large eggs, room temperature
1 jar (10 ounces) orange marmalade spreadable fruit
2-2/3 cups all-purpose flour
3 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon salt
1/3 cup orange juice
1/2 cup chopped pecans

Steps:

  • Preheat oven to 350°. Grease and flour a 9x5-in. loaf pan. In a large bowl, beat butter and brown sugar until blended. Add eggs, 1 at a time, beating well after each addition. Gradually beat in marmalade. In another bowl, whisk flour, baking powder, cinnamon and salt; add to butter mixture alternately with orange juice, beating well after each addition. Fold in pecans., Transfer to prepared pan. Bake 50-60 minutes or until a toothpick inserted in center comes out clean. Cool in pan 10 minutes before removing to a wire rack to cool.
    Freeze option: Securely wrap cooled loaf in plastic and foil. To use, thaw wrapped loaf at room temperature. If desired, warm slices in toaster or microwave.

    1. Preheat the oven to 180°C/350°F/gas 4. Lightly grease a 28cm loose-bottomed tart tin.
    2. Bash 2 tablespoons of demerara sugar in a pestle and mortar until fine, then mix with the remaining demerara so you have a range of textures. Tip into the tart tin and shake around to coat. Tap gently, then tip any excess back into the mortar for later.

    8. Pour over any leftover custard, leaving it to soak in if necessary, then sprinkle with the remaining demerara sugar.
    9. Bake for around 25 minutes, or until set. Allow the pudding to rest for 10 minutes, then serve with cream, custard or ice cream, if you like – it’s delicious cold, too, if you’ve got any leftovers!

    2. First make your flavoured butter by mixing the butter with the nutmeg, cinnamon and orange zest. Use a little of it to butter a medium-sized shallow, ovenproof dish.
    3. Butter the bread using the flavoured butter, then cut each slice in half diagonally. Put the slices in your buttered dish.
    4. Now separate the eggs, reserving all 9 yolks but just 1 egg white. Whisk together the egg yolks and egg white with the sugar, then gently heat the milk and cream in a saucepan with the vanilla seeds and pod. Pour into the eggs, stirring all the time. Remove the vanilla pod then pour the mixture over the bread and leave to soak for at least 20 minutes.

    6. Meanwhile, gently warm the marmalade in a saucepan, then remove the dish from the oven and brush the marmalade over the top of the bread. Pop the dish back into the oven for another 5 to 10 minutes. Allow it to cool and firm up slightly before serving.
