Steps:
- Arrange pork in two oven-proof 9x13 dishes. Add red potatoes in between the ribs. Salt and pepper all to taste.
- Mix the rest of the ingredients and spoon over the meat/potatoes.
- Cover with foil or plastic wrap and marinate in the refrigerator for 2 hours. Flip meat, salt and pepper lightly, recover and marinate for 2 more hours.
- Preheat oven to 425 degrees. Remove cover from pans and cook for 40-45 minutes or until 165 degrees internal temperature is reached. Potatoes will be tender.

- In a small bowl, combine the sugar, cumin, chili powder, pepper, garlic powder, and 1/4 teaspoon salt. Place the ribs on a large baking sheet. Make crosswise slits halfway through the meat, without slicing through it completely. Rub 1 tablespoon of oil in the meat of the ribs and the dry rub all over the ribs on all sides, including into the cuts you made. Cover the baking sheet with plastic wrap and refrigerate at least 4 hours or up to 8 hours, turning occasionally. Coat a grill rack with cooking spray. Preheat the grill to medium high. Sprinkle the ribs with salt and pepper. Grill the ribs for 20 minutes, turning once, or until a thermometer inserted in the center of a rib registers 145F and the juices run clear.
